Ingredients

  • 3-4 Granny Smith apples
  • Juice from ½ lemon
  • ½ cup brown sugar
  • 1 ½ tsp ground cinnamon
  • 1 cup water
  • 2 tbsp cornstarch
  • 8 oz cream cheese room temperature
  • 4 oz Cool Whip
  • 1 cup confectioners’ sugar
  • 2 tsp vanilla extract

Instructions

  • Make the apple pie filling: In a large bowl, toss the apples with lemon juice, brown sugar, and cinnamon until everything’s nicely coated. Heat a large pan over medium-high heat and add the apple mixture along with a splash of water. Stir, bring to a boil, then reduce the heat and let it simmer uncovered for about 10 minutes, until the apples are soft. Scoop out a few tablespoons of the liquid from the pan and mix it with the cornstarch until smooth. Pour that mixture back in and cook for another 2–3 minutes, stirring constantly, until the sauce thickens and turns glossy. Remove from the heat and let it cool completely.
  • Make the cream cheese layer: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the Cool Whip, powdered sugar, and vanilla extract, and keep mixing until everything is fluffy and well blended.
  • Assemble the dip: Spread the cream cheese mixture evenly into your serving dish, then spoon the cooled apple pie filling over the top.
  • Serve and enjoy: Serve it right away or chill until you’re ready. Pair with graham crackers, cookies, or even pretzels for the perfect mix of sweet and salty.
