- 1 cup cottage cheese
- 2 eggs
- 1½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 tablespoon olive oil
Preheat your oven to 350°F (180°C) and line a loaf pan with parchment paper.
Add the cottage cheese and eggs to a blender and blend until smooth.
In a separate bowl, combine the flour, baking powder, and salt.
Pour the cottage cheese mixture into the dry ingredients and stir until combined.
Add the olive oil and mix until you have a smooth batter.
Pour the batter into the prepared loaf pan and spread it evenly.
Bake for 35–40 minutes, until the top is golden and a toothpick inserted into the center comes out clean.
