Cowboy Caviar
This cowboy caviar is fresh, colorful, and packed with bold, zesty flavor. Loaded with beans, veggies, and a tangy lime dressing, it’s easy to make ahead and perfect for parties, potlucks, and game days. Serve it with tortilla chips or use it as a topping for tacos, bowls, or grilled proteins.

- 4 large Roma tomatoes seeded and diced
- ½ red onion diced
- 15 oz can black beans rinsed and drained
- 15 oz can black eyed peas rinsed and drained
- 10 oz package frozen corn kernels thawed
- 1 green bell pepper seeded and diced
- 1-2 jalapenos seeded and diced
- 1 bunch cilantro chopped
Dressing:
- ⅓ cup olive oil
- 1 tablespoon white wine vinegar
- 1 tablespoon granulated sugar
- 1 lime juiced
- ½ teaspoon chili powder
- ¼ teaspoon garlic powder
- ¼ teaspoon cayenne pepper optional for more spice
- Salt and pepper to taste
Add all of the dressing ingredients to a small bowl and whisk until well combined. Give it a quick taste and adjust as needed.
In a large bowl, add all of the cowboy caviar ingredients.
Pour the dressing over the top and toss everything together until evenly coated.
Cover and refrigerate until ready to serve. Serve with tortilla chips.
