Cowboy Caviar

This cowboy caviar is fresh, colorful, and packed with bold, zesty flavor. Loaded with beans, veggies, and a tangy lime dressing, it’s easy to make ahead and perfect for parties, potlucks, and game days. Serve it with tortilla chips or use it as a topping for tacos, bowls, or grilled proteins.

Ingredients

  • 4 large Roma tomatoes seeded and diced
  • ½ red onion diced
  • 15 oz can black beans rinsed and drained
  • 15 oz can black eyed peas rinsed and drained
  • 10 oz package frozen corn kernels thawed
  • 1 green bell pepper seeded and diced
  • 1-2 jalapenos seeded and diced
  • 1 bunch cilantro chopped

Dressing:

  • cup olive oil
  • 1 tablespoon white wine vinegar
  • 1 tablespoon granulated sugar
  • 1 lime juiced
  • ½ teaspoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper optional for more spice
  • Salt and pepper to taste

Instructions

  • Add all of the dressing ingredients to a small bowl and whisk until well combined. Give it a quick taste and adjust as needed.
  • In a large bowl, add all of the cowboy caviar ingredients.
  • Pour the dressing over the top and toss everything together until evenly coated.
  • Cover and refrigerate until ready to serve. Serve with tortilla chips.
