- 2 stalks celery diced
- 2 carrots chopped into chunks
- 1 onion sliced
- 1 pound baby potatoes halved
- 3 pound chuck roast
- 1 16 ounce bottle catalina dressing
- 1 1 ounce envelope dry onion soup mix
Add the celery, carrots, onions, and baby potatoes to the bottom of your slow cooker β this will make a perfect veggie base for the roast to sit on.
Place the chuck roast right on top of the veggies.
In a small bowl, whisk together the Catalina dressing and dry onion soup mix until combined.
Pour the dressing mixture evenly over the roast, letting it drizzle down into the veggies.
Cover and cook on low for 8 hours or high for 6 hours, until the beef is fork-tender and everything smells amazing.
