Ingredients

  • 2 stalks celery diced
  • 2 carrots chopped into chunks
  • 1 onion sliced
  • 1 pound baby potatoes halved
  • 3 pound chuck roast
  • 1 16 ounce bottle catalina dressing
  • 1 1 ounce envelope dry onion soup mix

Instructions

  • Add the celery, carrots, onions, and baby potatoes to the bottom of your slow cooker β€” this will make a perfect veggie base for the roast to sit on.
  • Place the chuck roast right on top of the veggies.
  • In a small bowl, whisk together the Catalina dressing and dry onion soup mix until combined.
  • Pour the dressing mixture evenly over the roast, letting it drizzle down into the veggies.
  • Cover and cook on low for 8 hours or high for 6 hours, until the beef is fork-tender and everything smells amazing.
