Crockpot Cheesy Bacon Ranch Potatoes

Tender, buttery potatoes slow-cooked with bacon, ranch seasoning, and melty cheese. This easy crockpot side dish is packed with flavor and perfect for family dinners, holidays, or feeding a crowd.

Ingredients

  • 3 lb baby red potatoes halved
  • 1 onion diced
  • 3 cloves garlic minced
  • 8-10 slices bacon cooked and chopped
  • 1 oz envelope ranch seasoning mix
  • 1 ½ cups shredded colby jack cheese divided
  • ¾ stick butter 6 tablespoons
  • Salt and pepper to taste
  • Chopped green onions or chives for topping

Instructions

  • Heat a skillet over medium heat and cook the bacon until crisp. Transfer to a plate, then chop into smaller pieces.
  • Lightly grease the inside of your crockpot, then add the potatoes, onion, garlic, and chopped bacon.
  • Sprinkle over the ranch seasoning, add 1 cup of the cheese, and top with the butter, salt, and pepper.
  • Cover and cook on low for 6–8 hours or high for 3–4 hours, until the potatoes are fork tender.
  • Give everything a good stir, then sprinkle over the remaining ½ cup of cheese. Cover again for a few minutes until the cheese is melted.
  • Finish with green onions before serving.
