Ingredients

  • 1 (10-ounce) can mild diced tomatoes with green chiles
  • 3 bell peppers green, yellow, and red, sliced into strips
  • 1 large yellow onion sliced
  • 4 cloves garlic minced
  • 1 ½ pounds boneless skinless chicken breasts
  • 1 (1.25-ounce) packet fajita seasoning mix
  • ½ teaspoon black pepper
  • 2 tablespoons fresh lime juice 1 lime
  • Soft shell fajita tortillas warmed, optional for serving
  • Fresh chopped cilantro optional for serving
  • Sour cream optional for serving

Instructions

  • Add the diced tomatoes, peppers, onions, garlic, and chicken to a 6-quart or larger slow cooker.
  • Sprinkle the fajita seasoning and black pepper over the chicken, then add the lime juice.
  • Cover and cook on low for 6–8 hours or high for about 4 hours, until the chicken is fully cooked and tender.
  • Remove the chicken and shred it using two forks, then return it to the slow cooker and stir to combine with the juices and vegetables.
  • Serve in warmed tortillas and top with cilantro and sour cream, if desired.
