- 1 pound ground beef browned and drained
- 1 small onion diced
- 2 bell peppers diced
- 1 cup uncooked long-grain rice
- 1 15-ounce can diced tomatoes
- 1½ cups beef broth
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1½ cups shredded mozzarella cheese
Add the ground beef, onion, bell peppers, rice, diced tomatoes, broth, Italian seasoning, salt, and pepper to the slow cooker.
Cover and cook on low for 6–7 hours, until the rice is tender.
Sprinkle the cheese evenly over the top, cover again, and cook for another 20–30 minutes, until melted.
Give it a light stir and serve warm.
