Halloween Ghost Cornflake & Peanut Butter Cookies

These no-bake Halloween ghost cookies are sweet, sticky, and just the right amount of spooky. Made with crunchy cornflakes and creamy peanut butter, they’re topped with marshmallow ghosts dipped in white chocolate—perfect for parties, class treats, or just a fun afternoon activity with the kids. Ingredients

  • 4 cups cornflake cereal
  • 1/2 cup peanut butter
  • 1/2 cup syrup
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

For the decoration:

  • 1 cup white chocolate melted
  • 1 tbsp dark chocolate for eyes and mouth
  • 18 marshmallows

Instructions

Make the caramel base:

  • Add the sugar, corn syrup, and peanut butter to a saucepan and warm it over medium heat. Stir the whole time so it doesn’t burn—it’ll start to melt down into a smooth, caramel-like mixture. Once it’s nice and silky, take it off the heat and stir in the vanilla and salt.

Shape the cookies:

  • Pour that warm mixture over the cornflakes in a large bowl. Stir gently with a spatula until everything is coated. Then, use a cookie scoop (a size 20 works great) to scoop little mounds onto parchment paper or a lined baking sheet. Press each one down just slightly so they hold their shape. Let them cool at room temp until they’re set.

Decorate for Halloween:

  • Melt your white chocolate and spoon a little bit on top of each cookie. Dip a marshmallow into the melted chocolate, tap off the excess, and set it right on top of each cookie to make your ghost. Let everything set (you can pop them in the fridge to speed this up). Then, grab a toothpick, dip it into melted dark chocolate, and carefully draw on spooky little eyes and mouths.
