Preheat your oven to 350°F (175°C) and line a 9x9-inch baking dish with parchment paper.
In a large mixing bowl, stir together the mixed nuts, rolled oats, honey, and a pinch of salt until everything's well coated and evenly mixed.
Pour the mixture into your prepared dish and press it down firmly—really pack it in so the bars hold together nicely.
Bake for about 15 minutes, or until the edges are just starting to crisp up and the nuts look lightly golden.
Take it out of the oven and let it cool completely in the dish. (This part’s key for clean slices later!)
While it cools, melt the dark chocolate chips with the coconut oil in a microwave-safe bowl—30-second intervals, stirring in between, until smooth.
Once the bars are cool, slice into 9–12 pieces. Dip the bottom of each bar into the melted chocolate, then drizzle more over the top with a spoon or piping bag.
Pop the bars into the fridge for 15–20 minutes to let the chocolate set.
