Heat a non-stick pan over a medium heat, and spritz with low calorie cooking spray. Fry the onions and carrots for 5-10 minutes, or until slightly softened. Add the garlic and continue to cook for another minute.
Meanwhile, cover the chicken breasts with clingfilm and flatten with a rolling pin. Set aside.
Pre-heat oven to 180 degrees.
Add the flour, soy sauce, honey, and stock to the pan with onions, carrots, and garlic. Add the Spicentice mix, and bring to the boil. Reduce heat and simmer for 15-20 minutes before blitzing with a hand blender to create a smooth consistency.
Meanwhile, dip the chicken breasts in a little flour, then into the beaten egg, and finally coat with the breadcrumbs. Lay on a baking tray and spritz with low calorie cooking spray. Bake in the oven for 20-25 minutes or until the chicken is cooked through and the outside is golden brown.
Slice the chicken breast, drizzle over the sauce, and serve with your choice of side dishes. Enjoy!
