For the peaches:
- 4 cups fresh peach slices peeled
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- Pinch of salt
For the dough:
- 6 tbsp unsalted butter melted
- 1 cup all purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 3/4 cup milk
For topping:
- 2 tbsp brown sugar
- 2 tsp cinnamon
Spray a 9x13 baking dish with nonstick spray and get your oven preheating to 350°F.
Start with the peaches: In a medium saucepan, combine the sliced peaches with the granulated sugar, brown sugar, and a pinch of salt. Let that cook over medium heat for about 3–4 minutes, just until the sugar melts down and everything’s warm and juicy.
Pour the melted butter straight into the bottom of your prepared baking dish—no need to stir it in.
In a mixing bowl, whisk together the flour, 1 cup of sugar, baking powder, salt, and milk until smooth. Pour that right into the pan over the butter. Again, don’t stir.
Now grab your peaches and gently spoon them over the batter, spacing them evenly across the dish. A little juice is good too! Sprinkle over the brown sugar and cinnamon topping.
Pop the cobbler into the oven and bake for 38–42 minutes, or until the top is golden and bubbling around the edges.
Let it cool just a bit, then serve warm with a big scoop of vanilla ice cream.
