Slimming World Sausage Rolls
Quick and easy, and made with real pastry, these sausage rolls are perfect for lunch, dinner, or family picnics.

- 3 low calorie sausages
- 70 grams light, ready rolled puff pastry
- 1 egg beaten
- Low calorie cooking spray
Preheat your oven to 200 degrees.
In a bowl, remove the sausages from their skins and gently squash together with a fork, to form a ball of sausage meat.
Make two equal sized rectangles from your puff pastry, and lay on a cold, flat surface.
Place half of the sausage meat on one side of each pastry rectangle, and brush one edge with beaten egg. Gently fold both in half to form your sausage rolls, so the egg acts as a seal. Crimp the open edge with a folk, gently add some slits with your knife (don't cut all the way through the pastry) and brush with beaten egg.
Spritz a baking tray with low calorie cooking spray (to prevent sticking), and place your sausage rolls on the tray. You might find it useful to use a pallet knife to do this.
Bake in the oven for 20 minutes, or until your sausage rolls are piping hot and golden brown.
Serve and enjoy!
