Servings: 4
- 10-12 strawberries diced
- 1/2 red onion finely chopped
- 1/4 cup fresh cilantro chopped
- Juice of 1 lime
- 1-2 jalapeños diced (optional, for added spice)
- 1/4 teaspoon salt
- Pepper to taste
- 1/2 cup natural Greek yogurt
- Olive oil to taste
Add the chopped strawberries, finely diced red onion, fresh cilantro, jalapeño, a pinch of salt, and some black pepper to a large mixing bowl.
Squeeze over the juice of one lime and give everything a good stir so the flavors start to come together.
Taste and adjust—add more lime juice, salt, or pepper if needed. You want it to be bright, fresh, and a little punchy.
Pop the bowl in the fridge for at least 30 minutes to let the flavors blend. Don’t skip this part—it makes a difference.
When you're ready to serve, spoon a layer of plain Greek yogurt onto a plate or into a shallow bowl. Season the yogurt with a pinch of salt, a little black pepper, and a drizzle of olive oil.
Top with a generous spoonful of the strawberry pico de gallo.
Serve with mini toasts, crispy bread, or tortilla chips—and dig in!
