Bacon & Leek Hash

Ingredients

  • 1 medium sized potato peeled and cut into cubes
  • 1 rasher bacon visible fat removed, chopped
  • 1/2 leek chopped
  • 1 spring onion chopped
  • 1 egg
  • 20 grams reduced fat cheddar cheese grated
  • 1 tsp dried mixed herbs
  • Low calorie cooking spray

Instructions

  • Boil your potato cubes for 10 minutes, or until soft, and drain in a colander. Give them a really good shake to create some fluffy edges!
  • Heat a small frying pan over a medium to high heat, and spritz with low calorie cooking spray. Cook the bacon for a few minutes. Add the potatoes, leek, and herbs to the pan, and fry for 5-10 minutes or until the leek is cooked and the potatoes are starting to turn a little crispy.
  • Add the half of the spring onion and stir well.
  • Create a hole in the middle of the pan, and crack in your egg.
  • Sprinkle the leek and potato with cheese.
  • Continue to cook until the white of the egg is cooked, but the yolk is still runny. This will take around 5 minutes.
  • Garnish with the remaining spring onion.
  • Serve and enjoy!
