Boil your potato cubes for 10 minutes, or until soft, and drain in a colander. Give them a really good shake to create some fluffy edges!
Heat a small frying pan over a medium to high heat, and spritz with low calorie cooking spray. Cook the bacon for a few minutes. Add the potatoes, leek, and herbs to the pan, and fry for 5-10 minutes or until the leek is cooked and the potatoes are starting to turn a little crispy.
Add the half of the spring onion and stir well.
Create a hole in the middle of the pan, and crack in your egg.
Sprinkle the leek and potato with cheese.
Continue to cook until the white of the egg is cooked, but the yolk is still runny. This will take around 5 minutes.
Garnish with the remaining spring onion.
