Jam Sponge Pudding Cake

Super quick and easy, these slimming friendly jam sponge pudding cakes make the perfect dessert after any meal!

Ingredients

  • 40 grams oats
  • 1 tbsp granulated sweetener
  • 1 tsp baking powder
  • 2 tbsp fat-free Greek natural yoghurt
  • 1 tsp vanilla extract
  • 1 egg
  • 1 tbsp jam choose any flavour you like

Instructions

  • Add the oats to a mini blender or chopper, and whizz the oats until they're the texture of flour.
  • Add the sweetener and baking powder, and whizz again so mixed well.
  • Add the yoghurt, vanilla extract, and egg, and whizz again so mixed well.
  • Pour half of the mixture into a mug, and then gently add the jam. Pour the remaining mixture on top.
  • Microwave for 1 minute 30 seconds, or until the mixture is cooked. Your pudding should be firm and springly to the touch. If it's not quite ready, pop back in the microwave for 15 second intervals, making sure that you don't cook for too long and dry out your pudding.
  • To remove from the mug, place a plate over the top, turn upside down, and gently lift off the mug. You'll be left with the jam on top of the pudding!
  • Serve warm, and enjoy!
