Thanks to a little bit of kitchen magic, they’re low in Syns and calories, and just as satisfying as the version that you were served up on Sunday afternoons in your childhood.

How many calories are in this recipe?

There are 282 calories in one of these cakes. 

For reference, an average man needs to consume around 2,500 calories a day to maintain a healthy body weight. For an average woman, it’s around 2,000 calories a day.

Of course, if you’re aiming to lose weight, you’ll want to consume less than this to reach your goals!

How many Syns? 

Assuming that you use oats from your Healthy Extra B allowance, there are just 3 Syns per serving in this recipe. 

But how can jam sponge puddings be so slimming friendly?! 

Good question! 

A typical jam sponge pudding recipe will include generous amounts of butter, sugar, and flour, which inevitably means that the end result will be packed full of calories and Syns. 

In this recipe though, we make a few substitutes to ensure that you can enjoy your favourite dessert even if you’re watching your weight. 

We’re going to use oats instead of flour, but no one will know unless you tell them!

Do you need any specialist equipment to make this recipe? 

This recipe is one of the quickest and easiest that you’ll ever make, though you’ll need a mini blender or chopper to turn the oats into the texture of flour. 

If you don’t already have one, I recommend this option from Kenwood. 

 

I use it for lots of different bits and bobs in the kitchen, and it always comes in handy! 

You’re also going to need a mug. 

Though anything that you’ve got in your cupboard is likely to do the job absolutely fine, it’s worth choosing a large mug that’s the same width at the top and the bottom. 

Otherwise, your cake might end up looking a little bit wonky – though it’ll still taste great! 

If possible, use the tallest mug that you have to avoid any of the mixture spilling over the edges.

These Slimming World jam sponge pudding cakes are perfectly delicious in their own right, so you can serve them on their own. 

If you fancy a little extra indulgence though, you could add some custard or even a spray of squirty cream.

Jam Sponge Pudding Cake

Super quick and easy, these slimming friendly jam sponge pudding cakes make the perfect dessert after any meal!

Ingredients

  • 40 grams oats
  • 1 tbsp granulated sweetener
  • 1 tsp baking powder
  • 2 tbsp fat-free Greek natural yoghurt
  • 1 tsp vanilla extract
  • 1 egg
  • 1 tbsp jam choose any flavour you like

Instructions

  • Add the oats to a mini blender or chopper, and whizz the oats until they're the texture of flour.
  • Add the sweetener and baking powder, and whizz again so mixed well.
  • Add the yoghurt, vanilla extract, and egg, and whizz again so mixed well.
  • Pour half of the mixture into a mug, and then gently add the jam. Pour the remaining mixture on top.
  • Microwave for 1 minute 30 seconds, or until the mixture is cooked. Your pudding should be firm and springly to the touch. If it's not quite ready, pop back in the microwave for 15 second intervals, making sure that you don't cook for too long and dry out your pudding.
  • To remove from the mug, place a plate over the top, turn upside down, and gently lift off the mug. You'll be left with the jam on top of the pudding!
  • Serve warm, and enjoy!
