- 10 Christmas Tree Snack Cakes
- 8 ounces cream cheese
- 18 ounces white chocolate chips
- Red cookie icing not gel, the cookie icing will harden
- Green sanding sugar
Line a baking sheet with parchment or wax paper and set it aside.
Crumble the Christmas Tree Cakes into a large mixing bowl. Cut the cream cheese into chunks and toss them right in.
Using a hand mixer, blend everything together until you’ve got a thick, dough-like mixture that smells like pure holiday magic.
Grab a 1½-inch cookie scoop and roll the mixture into balls. Place them on your prepared baking sheet as you go.
Once all the truffles are rolled, pop the tray in the freezer for about an hour to firm them up.
Melt your white chocolate chips in the microwave in 20-second bursts, stirring well each time until smooth and glossy.
Dip each chilled truffle into the melted chocolate, letting the extra drip back into the bowl, then place them back on the parchment.
While the chocolate is still wet, sprinkle with sanding sugar for that classic sparkle.
Once all the truffles are coated and sprinkled, use cookie icing to draw those signature red zigzag lines — just like the original Christmas Tree Cakes.
