Ingredients

  • 1 lb ground beef
  • 1 1 oz packet taco seasoning
  • 2 tbsp water
  • 2 lb frozen tater tots
  • ½ cup queso cheese
  • 1 ¼ cups shredded Monterey Jack cheese
  • Optional Toppings:
  • Pico de gallo
  • Sour cream
  • Lime wedges
  • Jalapeños
  • Fresh cilantro

Instructions

  • Preheat the oven to 400°F and line a large baking sheet with parchment paper.
  • Spread the tater tots out evenly on the pan and bake until golden and crispy, about 25–30 minutes, shaking the pan halfway through.
  • While the tots bake, heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up as it browns, about 7–10 minutes. Drain off any excess grease, then stir in the taco seasoning and water. Cook for another 1–2 minutes.
  • Take the tater tots out of the oven and drizzle them with queso. Top with the seasoned beef and shredded Monterey Jack cheese.
  • Return the pan to the oven and bake for about 10 more minutes, until the cheese is melted and everything is heated through.
  • Remove from the oven, finish with your favorite toppings, and serve immediately.
