Pizza Breakfast Hash
This pizza breakfast hash is full of flavour, and also makes a great brunch, lunch, or light dinner for one!

- 1 medium sized potato peeled and cut into chunks
- 1 spring onion chopped
- 1 tbsp tomato puree
- 20 grams reduced fat cheddar cheese grated
- 1 egg
- 1 tsp dried oregano
- Low calorie cooking spray
Boil your potato cubes for 10 minutes, or until soft, and drain in a colander. Give them a really good shake to create some fluffy edges!
Heat a small frying pan over a medium to high heat, and spritz with low calorie cooking spray. Add the potatoes and oregano and fry for 5-10 minutes or until they're starting to turn a little crispy.
Create a hole in the middle of the pan and crack in the egg.
Mix the tomato puree with a tbsp of water. Spoon this mixture over the potatoes, and sprinkle on the cheese and spring onion.
Continue to cook until the white of the egg is cooked, but the yolk is still runny. This will take around 5 minutes.
Serve and enjoy!
