How To Make Fluffy Spiced Pancakes With Caramel Apple Compote 

I’ve divided the steps up into two sections, so you can mix and match to your liking. If you don’t have the time to make the homemade compote you could serve your pancakes simply with some whipped cream or syrup. Once you’ve tried the compote, I think you’ll want to make it again! It’s beautiful spooned over waffles, oatmeal bowls, and even with savory dishes like pork chops if you love a sweet and savory combo. 

For the pancakes:

  • In a large mixing bowl, whisk together all the dry ingredients so they’re evenly combined.

  • In a separate bowl, whisk the buttermilk, eggs, vanilla, and melted butter until smooth.
  • Pour the wet ingredients into the dry and gently stir until just combined — a few lumps are totally fine. Fold in the grated apple.

  • Let the batter rest for about 5–10 minutes while you whip up the compote (this helps the pancakes get extra fluffy).
  • Heat a skillet or griddle over medium heat and lightly grease it. Scoop the batter on, cooking until bubbles form on top and the edges look set. Flip and cook the other side until golden brown.
