Rigatoni pasta – Use whatever pasta shape you love, but rigatoni is my go-to—it holds onto that creamy sauce like a champ. Fettuccine or orecchiette also work beautifully.

Pumpkin purée – Make sure you’re using pure canned pumpkin, not pumpkin pie filling. If you’re using homemade purée, be sure it’s thick and not too watery so the sauce stays creamy.

Butter – Just one tablespoon to start things off and help the garlic and sage bloom.

Garlic – Freshly minced is best here. It adds depth without overpowering the pumpkin.

  • While the pasta cooks, melt the butter in a large skillet over medium heat. Add the garlic and sage, and sauté for a minute or two—just until everything smells amazing, but before the garlic browns.
