Every year without fail, some of my absolute favorite dishes on the holiday table are the salads! Don’t get me wrong, I enjoy the super indulgent main courses and sides just as much as anyone else, but a couple of delicious salads are essential. A little crunch, a burst of color, something fresh to cut through the heavy stuff… They always fly straight off the table when I’m hosting over the holidays, and these ones here are the ones that I return to every year.

This is the salad that earns a spot on your Christmas table year after year! It’s colorful, fresh, and a little bit fancy without being fussy. You’ve got hearty kale, sweet orange slices, juicy pomegranate seeds, creamy feta, and toasty walnuts, all tied together with a tangy balsamic dressing that makes every bite sparkle. It’s festive enough for the main event but simple enough to pull together while your roast is resting.

Serves: 6–8

Ingredients:

  • 4 cups kale, stems removed and chopped

  • 2 cups baby spinach

  • ½ cup pomegranate seeds

  • 1 orange, peeled and segmented

  • ½ cup crumbled feta cheese

  • 2 tbsp olive oil

I promise that even sprouts haters will be tempted by this one, so please do give it a try even if you’re skeptical! The Brussels are thinly shredded so they turn soft and glossy when they meet the warm bacon vinaigrette, and the little pops of cranberry sweetness cut through all that smoky richness. It’s festive, cozy, and comes together fast. 

Serves: 6–8

Ingredients:

  • 1 lb Brussels sprouts, trimmed and thinly sliced or shaved

  • 5 slices thick-cut bacon, chopped

  • ¼ cup dried cranberries

  • 2 tbsp olive oil

  • 1 tbsp apple cider vinegar

  • 1 tbsp maple syrup

  • 1 tsp Dijon mustard

  • Salt and black pepper to taste

Instructions:

  1. In a large skillet, cook the bacon over medium heat until crisp. Remove with a slotted spoon and set aside, leaving about 1 tablespoon of bacon drippings in the pan.

  2. Add the shredded Brussels sprouts to the skillet and sauté for 3–4 minutes, stirring often, until just wilted but still bright green.

This is how you turn leftover roast beef into something that feels brand new! It’s a warm, cozy salad that could easily double as a main course. The beef gets paired with caramelized roasted veggies, greens, and a creamy horseradish dressing that adds just the right kick. It’s rustic and hearty, but still bright enough to balance out all the rich holiday fare.

Ingredients: 

  • 2 cups leftover roast beef, thinly sliced or shredded (I used leftover brisket) 

  • 2 cups roasted vegetables (like carrots, potatoes, and parsnips)

  • 3 cups arugula or mixed greens

  • ¼ cup red onion, thinly sliced

  • ¼ cup crumbled feta or blue cheese (optional, but delicious)

  • 2 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • Salt and pepper to taste

For the Horseradish Dressing:

  • ¼ cup sour cream or Greek yogurt

  • 1 tbsp prepared horseradish (adjust to taste)

  • 1 tsp Dijon mustard

  • 1 tsp lemon juice

This is the kind of recipe that makes you look forward to leftovers. A little salty ham, a handful of sweet peas, sharp cheddar, and a creamy dressing — it’s simple, comforting, and somehow always disappears first at the table. I like using this one to batch some lunches over the holidays, and I always think it has a slightly nostalgic kind of charm about it! 

Serves: 6–8

Ingredients:

  • 12 oz short pasta (like shells or rotini)

  • 2 cups cooked ham, diced or shredded

  • 1 cup frozen peas, thawed

  • 1 cup shredded cheddar cheese

  • ½ cup diced celery (optional, for crunch)

  • ½ cup mayonnaise (or half mayo, half Greek yogurt)

  • 1 tbsp apple cider vinegar

  • 1 tsp Dijon mustard

  • Salt and pepper to taste

Instructions:

  1. Cook the pasta according to package directions. Drain, rinse under cool water, and set aside.

It’s loaded with chewy farro, crisp kale, juicy pomegranate seeds, and toasted pistachios — a mix that feels festive but still wonderfully down-to-earth. It’s hearty enough to stand on its own, but light enough to balance all the creamy casseroles and buttery sides on your plate. It tastes even better the next day, so it’s great when you want to get ahead with your prep!

Ingredients:

  • 1 cup uncooked farro (or quinoa for a gluten-free version)

  • 4 cups chopped kale, stems removed

How gorgeous is this potato salad?! Creamy baby potatoes get tossed with a lemony herb dressing and a scatter of jewel-like pomegranate seeds for the prettiest pop of color. It’s fresh, festive, and feels indulgent and light at the same time.

Serves: 6–8

Ingredients:

  • 2 lbs baby potatoes, halved

  • ½ cup pomegranate seeds

  • ¼ cup chopped fresh parsley

  • 2 tbsp chopped fresh dill

  • 2 tbsp chopped chives

  • ¼ cup olive oil

  • 1 tbsp lemon juice

  • 1 tsp Dijon mustard

  • 1 tsp honey

  • Salt and black pepper to taste

Instructions:

  1. Add the potatoes to a large pot of salted water. Boil for 10–12 minutes or until tender. Drain and let cool slightly.

  2. In a small bowl, whisk together olive oil, lemon juice, mustard, honey, salt, and pepper.

  4. Fold in parsley, dill, and chives, then gently stir through the pomegranate seeds.
