How To Make Crockpot Bruschetta Chicken 

  • Season the chicken breasts on both sides with salt, pepper, and Italian seasoning, then place them in the slow cooker.
  • Sprinkle the minced garlic over the top. Add the diced tomatoes, pour in the balsamic vinaigrette, and sprinkle over the sugar.

  • Cover and cook on low for 6 hours or high for 3 hours, until the chicken is tender and fully cooked.
  • Sprinkle the mozzarella over the chicken, cover again, and let it melt for about 10 minutes.
  • While the cheese melts, make the bruschetta topping. In a small bowl, combine the cherry tomatoes, basil, olive oil, balsamic vinegar, and a pinch of salt and pepper.

  • Spoon the fresh bruschetta mixture over the chicken just before serving.

Storage & Reheating 

Store any leftovers in an airtight container in the fridge for up to 4 days.

You can also freeze it for up to 3 months. Just thaw overnight in the fridge before reheating.

Recipe Notes

  • Make sure to drain the canned tomatoes well so the sauce doesn’t get too thin.
  • Add the cheese at the end so it melts perfectly without overcooking.
  • If you want a thicker sauce, remove the lid during the last 20 minutes of cooking to let some of the liquid cook off.
  • Try to keep the chicken in a single layer so it cooks evenly.
  • Let the chicken rest for a few minutes before serving so it stays nice and juicy.

Substitutes & Variations To Make This Recipe Your Own 

I’m a big advocate for using up what you already have in your kitchen rather than rushing out to the grocery store when you want to try something new. If you don’t have what’s on the list, here are some changes you can consider… 

  • Switch up the chicken: Chicken thighs work great and stay extra juicy.
  • Change the cheese: Provolone or an Italian blend are both good swaps for mozzarella.
  • No balsamic vinaigrette? You can mix balsamic vinegar with a little olive oil and Italian seasoning for a quick homemade version.
