Bacon Cheeseburger Sliders
You guys, THESE SLIDERS! You might have noticed that I’m very much into sliders at the minute, and that’s because I think they’re one of the very best ways to feed hungry guests, especially if you’re hosting game day or holiday gatherings. You loved my Big Mac sliders, BBQ chicken sliders, and buffalo chicken sliders, and so today I’ve got another banger to share with you to carry on the trend.
Here we’ve got all the best parts of a classic cheeseburger — juicy beef, melty cheese, crispy bacon, and that buttery bun finish — just baked together in one easy pull-apart pan. The ground beef gets sautéed with onions and garlic, then mixed with a little secret sauce for that irresistible burger flavor. Everything’s layered between soft King’s Hawaiian rolls with plenty of cheddar and bacon, brushed with a buttery Dijon glaze, and baked until golden and gooey.

How To Make Bacon Cheeseburger Sliders

Preheat your oven to 350°F and line a baking sheet with parchment paper. Set it aside while you prep the fillings.

In a large skillet over medium-high heat, cook the ground beef with the onions and garlic until the beef is browned and no longer pink, breaking it apart with a spatula as it cooks. Drain off any excess grease.

Transfer the cooked beef to a large bowl and stir in the secret sauce, salt, pepper, smoked paprika, and garlic powder. Mix everything together and set aside.

In the same skillet, cook the bacon until crispy. Once it’s cooled slightly, crumble it into bite-sized pieces and set aside.

Use a bread knife to slice the slider buns in half horizontally (keeping the tops connected) and place the bottom half on your prepared baking sheet.

Layer 6 slices of cheddar cheese evenly over the buns, then spread the beef mixture on top. Add the remaining 6 slices of cheese, followed by the crumbled bacon. Finish with the top half of the buns.

When you’re ready to reheat, pop them in the microwave in 1-minute intervals until they’re warmed through and the cheese is melty again. (They reheat surprisingly well, and they’re just as good for lunch the next day.)

Variations & Substitutions
You can use regular yeast dinner rolls or brioche slider rolls if you don’t have Hawaiian rolls on hand. Other flavors of King’s Hawaiian, like Savory Butter, work perfectly too.
These sliders are just as good with or without bacon. You can keep things simple with just beef, cheese, and bacon, or pile them high with toppings like tomatoes, onions, pickles, jalapeños, and lettuce for a more classic burger feel.
If you want a leaner option, swap the ground beef for ground turkey. And feel free to mix up the cheese! Mozzarella, provolone, Monterey Jack, Colby Jack, or even Pepper Jack all melt beautifully. Just make sure to use a layer under and over the beef to help hold everything together once it’s baked.
