Crockpot Chicken & Stuffing
When I was growing up, Sundays almost always involved a cozy crockpot dinner that had been bubbling away all afternoon. It’s a tradition I’ve carried on and it’s made weekends that little bit easier, and today’s recipe has become one of my lazy Sunday go-to choices!
It’s a dump and go option that requires zero babysitting, and you’ll just need a handful of ingredients. You’ll layer tender chicken breasts in the slow cooker, smother them with a creamy mix of sour cream and cream of chicken soup, then top everything with buttery stuffing that cooks up soft and flavorful.
It’s gorgeous with green beans and mashed potatoes, and though I make it right through the year, I always think it’s especially good over the holidays!

How To Make Crockpot Chicken & Stuffing

Place the chicken breasts in your crockpot.

Sprinkle over the parsley and onion powder, then dollop in the sour cream and cream of chicken soup. Give it all a good stir so the chicken’s nice and coated.

Scatter the diced onions over the top.

In a medium bowl, mix together the melted butter and stuffing mix until it’s evenly moistened, then spoon that buttery stuffing right over the chicken mixture.

Cover and cook on low for about 6 hours, until the chicken is tender and everything smells amazing. Finish with a sprinkle of fresh parsley, and enjoy!

Storage & Reheating
Keep any leftovers in an airtight container in the fridge for 2–3 days. It reheats really well. Just pop a portion in the microwave or warm it up on the stove with a splash of broth to keep it creamy.

No fresh onions on hand? Frozen ones work just fine. Toss them right in.

Short on time? Switch your crockpot to high and it’ll be ready in about 3–4 hours.
