It’s that time of the year! It’s almost summer, and if you’re anything like me, that means that you’re excited about all the gorgeous, colorful salads that you’ll be making over the next few months. I’ve got salads on repeat through the warmer months and I’m just obsessed with lighter, brighter, fresher dishes that can be served as lunches, dinners, or when you’re feeding a crowd for BBQs, potlucks, and cookouts.
Today I’m sharing my favorite orzo salad recipes. These are all satisfying and will definitely fill you up, but they all somehow feel a little fancier and more elevated than you typical pasta salad kind of situation.
Anyway, that’s enough chat – let’s get down to actually prepping these salads. You can have most of them ready in about 20 minutes!
Greek Orzo Pasta Salad

If you love a classic Greek salad, this is an easy way to turn it into something a little more filling. It’s fresh, easy to throw together, and perfect for anything from weeknight dinners to summer gatherings. I could happily eat it on repeat, and I’ve made it literally dozens of times!
Serves: 4
Ingredients:
- 1 cup dry orzo
- ½ cup cucumber, diced
- ½ cup cherry tomatoes, halved
- â…“ cup feta cheese, crumbled
- ¼ cup Kalamata olives, sliced
- ¼ cup red onion, thinly sliced
- 2 tablespoons fresh parsley, chopped
For the dressing:
- ¼ cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon lemon juice
- 1 teaspoon dried oregano
- 1 clove garlic, minced
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper
Instructions:
- Cook the orzo in salted water according to package instructions until al dente. Drain and let cool slightly.
- Transfer the orzo to a large bowl and drizzle with a little olive oil to prevent sticking.
- Add the cucumber, cherry tomatoes, feta, olives, red onion, and parsley.
- In a small bowl or jar, whisk together the olive oil, red wine vinegar, lemon juice, oregano, garlic, salt, and pepper.
- Pour the dressing over the salad and toss well to combine.
- Chill for 20–30 minutes before serving for the best flavour.
Mediterranean Veggie Orzo Salad

This is my version of a Mediterranean orzo salad, and we’re roasting veggies to make it a little extra special. It’s still fresh and herby, but with a slightly warmer, more comforting feel than the classic versions. It’s great either warm or chilled, and it’s great for BBQs, cookouts, potlucks, and any time you want something you can prep in advance.
Serves: 4
Ingredients:
- 1 cup dry orzo
- 1 cup zucchini, diced or chopped
- 1 cup bell peppers, diced
- ½ cup cherry tomatoes
- â…“ cup feta cheese, crumbled
- 2 tablespoons fresh basil, chopped
- 2 tablespoons fresh parsley, chopped
For the dressing:
- ¼ cup olive oil
- 1 ½ tablespoons lemon juice
- 1 clove garlic, minced
- ½ teaspoon dried oregano
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper
Instructions:
- Preheat oven to 200°C (400°F). Toss the zucchini, bell peppers, and cherry tomatoes with a little olive oil, salt, and pepper, then spread on a baking tray. Roast for 20–25 minutes until tender and slightly caramelized.
- Meanwhile, cook the orzo in salted water according to package instructions until al dente. Drain and let cool slightly.
- Add the cooked orzo to a large bowl, then stir in the roasted vegetables, feta, basil, and parsley.
- In a small bowl or jar, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve warm or chill for later.
Lemon Parmesan Orzo Salad

Sometimes simple really is best, and this lemon parmesan orzo salad proves it! It’s light, fresh, and packed with bright lemon flavour, with just enough parmesan to make it feel a little extra without overcomplicating things. This one pairs so well with just about anything you can think of. I love it with grilled salmon or chicken!
Serves: 4
Ingredients:

- â…“ cup grated parmesan cheese
- 2 tablespoons fresh parsley, chopped
For the dressing:
- ¼ cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1 clove garlic, minced
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper

- 1 ½ cups cooked chicken breast, chopped (or use leftover shredded rotisserie chicken if you have it)
- ½ cup cherry tomatoes, halved

- 2 tablespoons olive oil
- 1 tablespoon lemon juice

It’s loaded with black beans, sweet corn, and fresh veggies, all tossed with orzo and a zesty lime dressing. It’s bright, filling, and perfect for BBQs, potlucks, or easy weeknight dinners when you want something a little different.

- 1 (400g) can black beans, drained and rinsed
- 1 cup sweetcorn (fresh, canned, or frozen and thawed)
- ½ cup cherry tomatoes, halved
- ½ cup bell pepper, diced
- ¼ cup red onion, finely diced
- ¼ cup fresh cilantro, chopped
For the dressing:
- ¼ cup olive oil
- 3 tablespoons lime juice
- 1 teaspoon honey (optional)
- 1 teaspoon cumin
- ½ teaspoon chili powder
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper

A super fun choice, and one of my favorite ways to get some extra veggies in when I’m feeding both adults and kids. It’s packed with colourful veggies, making it fresh, crunchy, and perfect for adding a little brightness to your table.

- ½ cup red bell pepper, diced
- ½ cup yellow bell pepper, diced
- ½ cup cucumber, diced
- ½ cup shredded carrots
- ¼ cup red onion, finely diced

- 2 tablespoons lemon juice
- 1 teaspoon honey (optional)
- ½ teaspoon salt (or to taste)

It’s a fun twist on a classic pasta salad and one of those recipes people can’t help but go back for—perfect for BBQs and lunches for a crowd.

- ¾ cup dill pickles, finely chopped
- ¼ cup red onion, very finely diced
- 2 tablespoons fresh dill, chopped
