The peppery flavour of rocket leaves will really perk up your tastebuds, without attempting to steal the show.

Add shavings of good quality parmesan cheese and a simple dressing, and you’re good to go. 

This salad takes just a few minutes to prepare, so you can get your lasagna in the oven and settle down to enjoy a glass of wine before prepping your salad once the main dish is cooling a little once cooked! 

2. Italian chopped salad 

This Italian chopped salad is full of wonderful colours and bold flavours, and it looks so impressive when served at the table alongside your lasagna. 

The best thing about this option is that you can tailor it depending on the ingredients that you have in your kitchen, and your own personal tastes.

A good slaw is one of my go to side dishes, and I make it with such a wide variety of dishes, from burgers to steaks to seafood.

It’s also a wonderful addition to the table when you’re serving pasta dishes, and it has a fun and informal vibe that’ll encourage everyone to tuck in and help themselves. 

This rainbow citrus slaw is colourful, crunchy, and has a beautifully light dressing prepared with mayo and yoghurt. 

Best of all, you can prepare it a day in advance and chill in the fridge.

Just remember to remove it from the fridge around an hour before you’re ready to eat, so it can come up to room temperature. 

4. Panzanella salad

Panzanella is a Tuscan style tomato and bread salad that’s fresh and summery, and I love serving it with lasagna when I’m looking for a heartier side with lots of personality! 

It’s a fantastic way to use up any leftover bread that you might have (tip – try using leftover garlic bread and you’ll never look back!), and you can also throw in any extra veggies that you might have in your kitchen that need using up. 

You can grill your vegetables if you like (I find that this is a great option if they’re slightly past their very best and are starting to turn a little soft), or use your favourite seasonal produce that you can pick up locally.

Asparagus works well when it’s in season, and it makes for an interesting change.

5. Broccoli salad 

This yummy broccoli salad doesn’t require tons of fancy ingredients, and in fact you’ll need just three items to make the creamy, tangy dressing. Most of us are used to eating cooked broccoli, but it can be wonderful when served raw, with plenty of crunch and texture. 

If you’re a meat lover and you want to take things up a notch, you could add crispy bacon to your salad. Bacon is a good addition to pretty much every dish that you could think of!
