This Slimming World carbonara recipe is quick and easy, requires just a handful of staple ingredients, and is also cheap to make if you’re slimming on a budget.

It’s also made the traditional Italian way, with no cream. The silky, satisfying creaminess actually comes from a combination of eggs and hard cheese, and you won’t find any substitutes like quark or fromage frais around here.

The result is an authentic carbonara, that I promise you will be every bit as good as when you order it from your favourite Italian restaurant!

Important tips for making this spaghetti carbonara

This recipe is super simple, but there are a few important things that you need to keep in mind to avoid common mistakes…

  • It’s often far too easy to end up scrambling your eggs when making carbonara. Instead of silky, creamy sauce, you end up with a bit of a mess! This is avoided in this recipe by making sure that the egg mixture is never applied directly to a heat source. Don’t be tempted to stir in the sauce over the hob.
  • Buy a wedge of fresh parmesan cheese and grate it yourself, instead of getting the ready grated version. If you won’t use the whole wedge, you can grate it and freeze it.
  • Don’t just chuck your unused egg whites down the sink. They can be kept in the fridge for two days, and can be used in other recipes such as meringue and mousse.

Is it safe to eat raw eggs in carbonara?

Raw eggs have long since had a bit of a dodgy reputation, and many people are concerned about the risk of salmonella poisoning.

There are a few things to consider here though.

Firstly, the eggs in this Slimming World carbonara recipe are not in fact completely raw. They cook lightly due to the heat from the pasta.

More importantly, the Food Standards Agency has revised its advice after a “thorough and robust” review of new scientific evidence found that those vulnerable to infection, including pregnant women and the elderly, could now safely eat raw or lightly cooked eggs without risking their health. These eggs must have been produced under the British Lion code of practice.

Course: Main Course
Cuisine: Italian
Servings: 4
Calories: 575kcal

Ingredients

  • 320 grams spaghetti or substitute with pasta shapes of your choice
  • 6 rashers lean back bacon chopped, any visible fat removed
  • 2 cloves garlic finely chopped
  • 1 whole egg
  • 3 egg yolks
  • 120 grams freshly grated Parmesan cheese grate your own, rather than buying ready grated from the supermarket
  • Freshly ground black pepper
  • Small handful of fresh parsley chopped
  • Low calorie cooking spray

Instructions

  • Boil the spaghetti according to packet instructions, and add a generous pinch of salt to the water. This dish is best served al dente, so don't be tempted to overcook your pasta!
  • Meanwhile, heat a frying pan over a medium heat and spritz with low calorie cooking spray. Add the garlic and the bacon, and fry until the bacon is starting to turn crispy. Take off the heat and set to one side.
  • Add the egg and egg yolks to a large bowl with the grated cheese, and whisk to combine.
  • Drain the pasta, and reserve a little of the salted water.
  • Add the pasta to the bowl with the egg and cheese mixture, and use tongs to combine and ensure all pasta is coated.
  • If necessary, add a tablespoon at a time of the salted water, until the sauce has reached your desired texture. It should be satisfyingly silky and creamy.
  • Add the bacon and the parsley, reserving a little parsley for garnishing, and toss with the tongs to combine.
  • Divide the pasta between four bowls, garnish with the remaining parsley, and season with black pepper.
  • Serve and enjoy!
