Creamy Cajun Chicken Pasta | Slimming Friendly

Creamy Cajun Chicken Pasta
Ingredients
- 2 chicken breasts skinless, chopped into bitesized chunks
- 150 grams dried pasta shapes of your choice
- 1 onion finely sliced
- 1 red pepper cut into slices/chunks
- 2 garlic cloves finely chopped
- 100 ml chicken stock
- 2 tbsp plain quark
- 2 tbsp low fat soft cheese E.g. Philadelphia or supermarkets' own brand
- 3-4 tsp Spicentice Chicken Cajun Seasoning Mix from Spicentice.com - use code SLIMMINGV20 at checkout to save 20% on all orders
- Low calorie cooking spray
- Fresh herbs and/or dried chilli flakes optional, to garnish
Instructions
- Cook pasta according to packet instructions, drain, rinse, and set aside.
- Meanwhile, heat a pan over a medium heat, spritz with low calorie cooking spray, and add the onion and garlic. Fry gently for 5 minutes, or until softened.
- Add the chicken, peppers, and Spicentice Cajun Seasoning Mix to the pan, mix well, and continue to cook for 5-10 minutes, or until the chicken is cooked through.
- Add the cooked pasta, quark, low fat soft cheese, and stock to the pan.
- Continue stirring, and allow to simmer for around 3 minutes, or until the sauce is at your desired consistency.
- Serve, garnish with herbs of your choice, and enjoy!
