When I announced to my boyfriend a couple of years back that we were having slimming friendly Diet Coke chicken for dinner, he had a look on his face that was somewhere in between disgust and bewilderment.
Let’s be honest, it sounds odd at best. At worst, it sounds like something a group of teenagers might knock up if you left them to their own devices with the contents of your fridge, and tasked them with making dinner.
There’s a reason why this recipe is so popular amongst dieters though, and that’s because it’s absolutely delicious.
The result is a mildly sweet and sticky sauce, packed with veggies and a taste that’s somewhere between barbecue and a Chinese takeaway.

I like to serve this dish with a portion of egg fried rice.
Simply cook rice according to packet instructions, heat a pan and spritz with low calorie cooking spray, and stir fry the rice, an egg, and a few dashes of soy sauce. You can also add some peas, sweetcorn, or finely chopped spring onions.
