My Easy Diet Coke Chicken Recipe Is Better Than Takeaway!

When I announced to my boyfriend a couple of years back that we were having Diet Coke chicken for dinner, he had a look on his face that was somewhere in between disgust and bewilderment.

Let’s be honest, it sounds odd at best.

At worst, it sounds like something a group of teenagers might knock up if you left them to their own devices with the contents of your fridge, and tasked them with making dinner.

There’s a reason why this recipe is so popular though, and that’s because it’s absolutely delicious.

The result is a mildly sweet and sticky sauce, packed with veggies and a taste that’s somewhere between barbecue and a Chinese takeaway.

With just 245 calories per portion, it’s likely to quickly become one of your favourites.

What should you serve with your Diet Coke chicken?

I like to serve this dish with a portion of egg fried rice.

Simply cook rice according to packet instructions, heat a pan and spritz with low calorie cooking spray, and stir fry the rice, an egg, and a few dashes of soy sauce.

You can also add some peas, sweetcorn, or finely chopped spring onions.

Ingredients

  • 2 chicken breasts raw, diced
  • 1 can Diet Coke
  • 1 onion roughly chopped
  • 1 garlic clove crushed
  • 1 pepper sliced - I prefer to use ready prepared sliced peppers from the supermarket
  • 100 g mangetout
  • 4 large mushrooms sliced
  • 1 tbsp tomato puree
  • 1 tbsp soy sauce
  • 1 tsp balsamic vinegar
  • 1 tsp Worcester sauce
  • Low calorie cooking spray

Instructions

  • Heat a heavy based pan over a medium to high heat, and spray with low calorie cooking spray. Add the onion and garlic, and cook until softened. 
  • Add the chicken and cook for 5 minutes or until slightly browned.

  • Add the pepper, mushrooms, and mangetout, and cook for a further 2 minutes.

  • Pour in the Diet Coke, and add the tomato puree, soy sauce, balsamic vinegar, and Worcester sauce. Stir well. 
  • Bring the pan to a steady simmer, and cook for 25 minutes, stirring often, or until the sauce thickens and reduces to a slightly sticky texture. It may seem like there's a lot of liquid and that it isn't reducing - but it WILL happen, so be patient! 
  • Serve and enjoy!
