1. Full English breakfast toastie

Everyone loves a full English breakfast, right? So for something a little bit different, try incorporating all your favourite elements into a toasted sandwich!

You can add bacon, sausage, baked beans, mushrooms, fresh tomatoes, pretty much any ingredient that you’d typically find on your breakfast plate.

A good rule of thumb here is that you should cook all the components before you make your sandwich, so you only really need to worry about toasting the bread, and then you’re good to go.

2. Bacon, tomato, and avocado toastie

Salty bacon, fresh and juicy tomatoes, and creamy avocado… This toastie without cheese is perfect for breakfast, or at any time of the day!

Cook your bacon beforehand, slice your tomatoes thinly, and try to find an avocado that’s just ripe for the very best results.

I like to serve this one with a side serving of crisps, and it’s the ideal option if you have friends over for brunch and want to offer something that’s easy but also a little bit sophisticated.

3. Sardine toastie

Sardines on toast is a nutritious and easy breakfast, and it’s very easy to turn this classic meal into a toastie.

I like to use tinned sardines in tomato, as it adds a delicious sauciness to the sandwich and ensures that it isn’t dry. If you prefer, you could use sardines in olive oil, or add slices of seasoned fresh tomato.

Best of all, sardines really are an underrated superfood. They’re rich in omega 3s, vitamin D, and a fantastic source of calcium, as well as being delicious.

4. Chilli con carne toastie

If you’re making a big batch of chilli con carne, use the leftovers to make a toasted sandwich. Though you can add cheese if you’d like to, it’s totally delicious without. The flavours in chilli con carne will often improve overnight, so you’ll be rewarded with a super tasty lunchtime treat.

Stick with the Mexican vibe by serving with a side of nachos and some guacamole, salsa, or soured cream.

Some extra filling ideas for toasties using leftovers include:

  • Bolognese sauce
  • Roast beef and mustard
  • Turkey and cranberry sauce
  • Gammon and pineapple salsa

The bottom line is that if you have dinner leftovers in your fridge and you’re not sure what to do with them, putting them in a toastie is almost always a good idea!

5. Ham, tomato, and pesto toastie

Ham and tomato is a beautiful combination for an easy lunch, and its elevated when you add it to a toastie with a generous scraping of pesto.

If you want to put in a bit of extra effort, why not try making your own pesto? It requires just 5 ingredients, and it’s a brilliant sauce to have in your fridge.

It’ll keep for about a week when it’s refrigerated, and you can use it to stir through pasta or alongside chicken or salmon. Alternatively, you can pop it in the freezer in smaller portions, so you always have some at hand to enjoy.

6. Baked bean toastie

This is basically beans on toast, but a little more fun! Most of us always have a tin of baked beans in the pantry, so this is a great option for when your fridge is looking a little bare, but you want to make a lunch that the kids will love.

You can take things up a notch by adding your favourite sauce. HP Brown Sauce and Frank’s Hot Sauce are my personal favourites, and a drop of Worcester really helps to add a deep savoury goodness to each bite.
