Crockpot Cranberry Pot Roast
I have another cozy crockpot recipe for you that’s just perfect for making over the holidays! Or really, on any Sunday afternoon when you want something comforting and wholesome without the effort that goes into making a full roast dinner. This crockpot cranberry pot roast is my festive twist on the classic slow cooked pot roast, and it’s a super easy dump and go option that requires very little hands-on time.
So we’re taking a classic chuck roast and giving it a sweet-and-savory upgrade with whole berry cranberry sauce, brown gravy mix, and onion soup mix. Everything simmers together low and slow until the beef is fall-apart tender and the sauce turns into the most delicious cranberry gravy. It’s the kind of meal that feels fancy enough for a holiday table but requires almost zero effort — just set it and let your crockpot work its magic!
If you like the sound of this one, I think you’ll also enjoy my crockpot chicken and stuffing, crockpot chicken pot roast, crockpot turkey stew, and crockpot cranberry meatballs. Let me know which one’s your favorite!

Ingredients
You’ll find your printable recipe card waiting for you at the bottom of this post!
-
Boneless chuck roast – the star of the show! It gets perfectly tender and flavorful after a long, slow cook.
-
Brown gravy mix – adds rich, savory flavor and helps create that luscious cranberry gravy.
-
Dry onion soup mix – a little secret shortcut that gives the roast tons of depth and umami.
-
Onion – for sweetness and texture as it melts into the sauce.
-
Celery – adds a subtle earthy flavor that balances the richness.
-
Garlic – because every good roast deserves a little garlic love.
-
Dried thyme – brings a warm, herby note that pairs perfectly with the cranberry.
-
Whole berry cranberry sauce – gives this pot roast its sweet-tart twist and that glossy, festive finish.
-
Butter – adds richness and helps all those flavors mingle while the roast cooks low and slow.

How To Make Crockpot Cranberry Pot Roast
-
Heat a little oil in a large skillet over medium-high heat. Give your chuck roast a good sear for about 4–6 minutes per side, until it’s nicely browned — that’s where all the flavor starts. Transfer the roast to your crockpot.

-
Sprinkle over the brown gravy mix, dry onion soup mix, onion, celery, garlic, and dried thyme.

-
Spoon the cranberry sauce right on top, then tuck the slices of butter over everything (trust me, it’s worth it).

-
Cover and cook on low for 8–10 hours, until the meat is fall-apart tender and your kitchen smells amazing.
-
Serve it up with a generous spoonful of that cranberry gravy from the crockpot, and if you’re feeling fancy, top it with a few fresh cranberries and herbs.

Storage & Reheating
Store any leftovers in a sealed container in the fridge for 3–4 days. When you’re ready for round two, warm it up on the stovetop over medium heat until everything’s heated through.

Substitutes & Variations
-
You can swap the chuck roast for other cuts like brisket, bottom round, beef ribs, or even stew meat. Just stick to something that loves a long, slow cook.
-
Feeling adventurous? Try it with pork roast, turkey tenderloin, or even chicken breasts. Just keep an eye on the cooking time since leaner meats cook faster.
-
Prefer smooth cranberry sauce? Go for the jellied kind instead of whole berry. It still gives that sweet-tart flavor.
-
If you want to keep things simple, you can skip the gravy mix and just use the dry onion soup mix. But adding both gives a richer flavor and helps thicken that delicious sauce.
-
Want to make it a full meal in one pot? Toss in some potatoes and carrots before cooking for a cozy, hearty dinner.

Serving Ideas
-
Spoon that tender cranberry pot roast right over a bed of creamy mashed potatoes. It’s the perfect base for soaking up all that rich, tangy gravy.
-
Sprinkle a few fresh cranberries on top for a pop of color and a little burst of tartness.
-
Finish with a sprinkle of fresh herbs (like parsley or thyme) to give it a little extra wow factor.
