10 Italian Salad Recipes That Feel Fancy (But Are Super Easy!)
You wanted more salad recipes for the summer, so today I’m bringing you a BEAUTIFUL collection (if I do say so myself!) of my favorite Italian inspired salads to bring everyone together round your table on warmer days.
You’ll love these ones for hosting BBQs and cookouts and potlucks, though they all work just as well for laidback family dinners when you want something fresh and vibrant that brings some Mediterranean flair to your mealtimes. None of these require much prep and there are plenty of options that lean into simple ingredients that you likely already have at home.
I believe that salads some should be easy, bright, and never an afterthought, and I hope you’ll agree that these are real winners! My personal favorites are the summer panzanella, chicken caprese, and tomato burrata. I can’t wait to hear what yours are!
Summer Panzanella Salad

Let’s kick things off with a bit of a showstopper! This summer panzanella is rustic and feels like it came from a traditional Italian kitchen, and yet it still looks (and tastes) super impressive. It’s made with chunks of crusty bread, juicy tomatoes, and fresh basil, all soaked in a simple dressing that brings everything together. It’s simple yet elevated, a little messy, and exactly what you want on a warm day.
Serves: 4
Ingredients:
- 3 cups crusty bread, cut into chunks (slightly stale works best, and it’s a good way to use up whatever leftovers you might have)
- 2 cups cherry tomatoes, halved (or chopped larger tomatoes)
- 1 cup cucumber, diced
- ¼ cup red onion, thinly sliced
- ¼ cup fresh basil leaves
For the dressing:
- â…“ cup olive oil
- 3 tablespoons red wine vinegar
- 1 clove garlic, minced
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper
Instructions:
- If your bread isn’t already stale, lightly toast the chunks in the oven at 180°C (350°F) for 8–10 minutes until slightly crisp on the outside.
- Add the bread to a large bowl along with the tomatoes, cucumber, red onion, and basil.
- In a small bowl or jar, whisk together the olive oil, red wine vinegar, garlic, salt, and pepper.
- Pour the dressing over the salad and toss well to combine.
- Let the salad sit for 15–20 minutes before serving so the bread can soak up the dressing.

For this one, we’re skipping the mayo and leaning into fresh, Mediterranean-style flavours with olive oil, lemon, herbs, and a few crisp veggies.
