15 Summer Salad Platters for Easy Hosting & Entertaining
Today I want to talk about one of my favorite easy entertaining hacks for the summer – salad platters! These look impressive but they’re secretly oh so easy to pull together, and they always make me feel like I’m top of my hosting game, even if I’m actually just winging it.
This isn’t about big, heavily mixed salads with long ingredient lists. It’s about a handful of really good ingredients, arranged in a way that lets each one shine. Think less ‘recipe’, and more ‘effortless assembly’.
If you’re hosting, this is exactly the kind of food that makes life easier. Minimal prep, no last-minute stress, and everything can be set out for people to help themselves. Seriously, whether you’re hosting a BBQ, a cookout, a potluck, or just a casual summer gathering for friends, these are going to change your life!
My Best Tips for Summer Platters
1. Keep It Simple (Seriously)
You don’t need a long ingredient list. Most of these platters use around 4–6 main ingredients, and that’s more than enough.
A good rule is to pick one star ingredient, then build around it
- Burrata → add fruit + herbs
- Tomatoes → add cheese + olive oil
- Grilled veg → add something creamy
Let one thing lead, and don’t overcomplicate it.
2. Balance Your Flavours
This is where the magic happens. The best platters always have a mix of flavours and textures.
A simple formula to follow:
- Something creamy → burrata, mozzarella, ricotta, avocado
- Something fresh or juicy → fruit, tomatoes, cucumber
- Something salty or punchy → prosciutto, feta, olives
- Something bright → lemon, vinegar, herbs
You don’t need all of these every time, but hitting 2–3 of them makes everything feel balanced and really good.
3. Don’t Skip the Finishing Touches
This is what takes a platter from nice to wow.
Just before serving, add:
- A drizzle of good olive oil
- Fresh herbs
- A little salt and pepper
- Maybe honey or balsamic glaze

4. Think About How People Will Eat It
The best platters are easy to serve and share.
Ask yourself, can people scoop, grab, or build a bite easily?

5. Let It Look Natural (Not Perfect)

Because peaches and burrata are such a dreamy kind of combo, and this feels fancy and gives you all the hosting brownie points with very little hands-on effort. So refreshing, so colorful, and absolutely made for hot days! I love serving this one at cookouts and BBQs as it’s a great contrast to the grilled meats and some of the heavier salads that you might be thinking of making. Juicy watermelon and salty feta is a pairing I’ll never get bored of.

Ingredients:
- 4 cups watermelon, cubed
- ½ cup feta cheese, crumbled
- ¼ cup fresh mint leaves
- 2 tablespoons olive oil
- 1 tablespoon lime juice (optional)
- Pinch of salt and black pepper

- Arrange the watermelon cubes on a large platter.
- Sprinkle the feta evenly over the top.

Pineapple, Prosciutto & Mozzarella Salad

Sweet pineapple pairs perfectly with salty prosciutto and creamy cheese for something that feels a little different but still effortless. If you’re already grilling then you can grill the pineapple to add some char lines and a little smokiness, but that’s optional. I’ve made this one both ways, and both work beautifully.

Ingredients:
- 3 cups fresh pineapple, cut into chunks or slices
- ½ cup mozzarella pearls (or torn fresh mozzarella)
- 4–6 slices prosciutto
- ¼ cup fresh basil or mint

It’s perfect for scooping up with crusty bread and makes a great addition to any summer spread when you want something a little more savoury.

- 2 (400g) cans cannellini beans, drained and rinsed
- 1 ½ cups cherry tomatoes, halved
- 2 cloves garlic, finely minced
- ¼ cup fresh parsley or basil, chopped
- ¼ cup olive oil
- 1 tablespoon red wine vinegar (optional)
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper
- Crusty bread, for serving
Instructions:
- Add the cannellini beans and cherry tomatoes to a large bowl or platter.

I couldn’t create this collection without adding a classic caprese platter! This is probably the one that I’ve made the most, and it’s one of my go-to choices for adding to midweek meals during the summer, as well as being a solid choice for hosting.

Ingredients:
- 3–4 large ripe tomatoes, sliced (or 2 cups cherry tomatoes, if you prefer or that’s what you’ve got already)
- 2 balls fresh mozzarella, sliced or torn
- ¼ cup fresh basil leaves
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- Balsamic glaze for drizzling (optional)
Instructions:
- Arrange the tomato slices and mozzarella on a large platter, slightly overlapping.
- Tuck the basil leaves in between.
- Drizzle with olive oil and season with salt and pepper.
- Finish with a drizzle of balsamic glaze if using.

Whipped Ricotta Platter With Tomatoes & Herbs

This whipped ricotta with tomatoes and herbs feels a little fancy but couldn’t be easier to make. The ricotta is smooth and creamy, topped with juicy tomatoes, fresh herbs, and a drizzle of olive oil for a simple but flavour-packed combination. Make sure to serve with crusty bread for dipping and scooping.

- 3–4 medium zucchinis, shaved into ribbons (using a vegetable peeler)

Here we’re all about taking a tub of store-bought hummus and turning it into something fancy but with very little effort. Creamy hummus is spread out and topped with a fresh, crunchy Greek-style salad, giving you the perfect mix of textures and flavours in every bite. It’s great for scooping, sharing, and setting out for easy hosting.

Ingredients:
- 1 ½ cups hummus (store-bought or homemade if you want to go the extra mile, but it’s really not necessary!)
- ½ cup cucumber, diced
- ½ cup cherry tomatoes, halved
- ¼ cup red onion, finely diced
- ¼ cup Kalamata olives
- â…“ cup feta cheese, crumbled
- 2 tablespoons fresh parsley or dill, chopped
For the dressing:

Golden, crispy halloumi paired with juicy tomatoes and a drizzle of hot honey creates the perfect mix of salty, sweet, and just a little bit spicy. This has been a regular in my hosting rotation ever since hot honey started trending a few years back!
Serves: 4–6
Ingredients:
- 2 blocks halloumi, sliced
- 3-4 tomatoes, sliced
- ¼ cup fresh basil or mint
- 2 tablespoons olive oil
For the hot honey:
- 3 tablespoons honey
- ½–1 teaspoon chili flakes (adjust to taste)
Instructions:
- In a small bowl, mix the honey and chili flakes to make the hot honey. Set aside.

This Mediterranean couscous platter is fresh, colourful, and just a little more substantial than your typical salad. Fluffy couscous is paired with tender summer vegetables, plenty of herbs, and a light lemon dressing for something that feels both satisfying and easy.
Serves: 4–6
Ingredients:
- 1 cup dry couscous
- 1 cup boiling water or stock
- 1 zucchini, chopped
- 1 red bell pepper, chopped
- ½ red onion, sliced
- 1 cup chickpeas, drained and rinsed
- â…“ cup feta cheese, crumbled
- ¼ cup fresh parsley, chopped
- 2 tablespoons fresh mint, chopped
For the dressing:
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- ½ teaspoon salt (or to taste)

Instructions:
