2. Pierce the sweet potato several times with a fork, to allow steam to escape while cooking. Rub the sweet potato with olive oil, paprika, dried basil, and salt and pepper, ensuring it’s evenly coated.

3. Place the seasoned sweet potato in the air fryer basket. Cook the sweet potato in the air fryer for 30-40 minutes, or until it’s tender and the skin is nice and crispy.
4. Once the sweet potato is cooked, carefully remove it from the air fryer and let it cool for a few minutes. Cut the sweet potato in half lengthwise, creating two ‘jackets’.
