  • Ground beef: A classic base for sloppy joes. Use lean ground beef or drain off any excess grease after cooking.
  • Onion: Adds flavor and a little texture. Cook it until soft so it blends right into the mixture.
  • Paprika, garlic powder & onion powder: Simple spices that give the beef a deeper, savory flavor.
  • Salt & pepper: Just enough to bring everything together.
  • BBQ sauce: Adds that smoky, slightly sweet flavor that gives these sloppy joes their cowboy twist.
  • Ketchup: Helps create that classic sloppy joe base with a little extra sweetness.
  • Mustard & Worcestershire sauce: Add tang and depth to balance out the sweetness.

How To Make BBQ Cowboy Sloppy Joes 

  • Heat a large skillet over medium heat with a little bacon grease or oil. Add the diced onion and cook for about 4–5 minutes, until softened.
  • Add the ground beef and cook, breaking it up as it cooks, until fully browned, about 7–10 minutes. Drain any excess grease.
  • Stir in the paprika, garlic powder, onion powder, salt, and pepper.
  • Add the BBQ sauce, ketchup, mustard, and Worcestershire sauce. Stir everything together and bring to a low simmer. Let it cook for a couple of minutes, until slightly thickened.

  • To assemble, spoon the sloppy joe mixture onto the bottom half of each brioche bun. Top with pepper jack cheese, jalapeño slices, crispy onions, and bacon.

Recipe Notes 

  • The sloppy joe mixture can be made ahead of time and stored in the fridge for up to 3 days. Just reheat on the stovetop or in the microwave before assembling.
  • For extra flavor, toast the brioche buns in a skillet, toaster, or under the broiler before serving.
  • If the mixture gets too thick, stir in a splash of water or broth to loosen it up.
  • Let the sauce simmer for a few minutes so it thickens slightly and really coats the beef.
