Let’s start with a classic! This creamy tomato soup is oh so satisfying, and it’s one of my go-to choices for cold winter nights. Leftovers will keep in the fridge for 3 days, and they make a super easy lunch. I use canned tomatoes for convenience, and a handful of store cupboard staples. 

Serves: 4

Ingredients:

  • 2 cans (14.5 oz) diced tomatoes
  • 1 small onion, chopped
  • 2 carrots, chopped
  • 2 garlic cloves, minced
  • 1 tbsp tomato puree
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh basil, for garnish

Instructions:

  1. In your crockpot, combine tomatoes, onion, carrot, garlic, tomato puree, and vegetable broth. Stir in basil, salt, and pepper.
  2. Cook on low for 3-4 hours, then blend with an immersion blender until smooth.
  3. Stir in heavy cream and serve hot, garnished with fresh basil leaves and black pepper.

Serves: 4

Ingredients:

  • 2 chicken breasts
  • 1 medium onion, chopped
  • 1 can (10 oz) buffalo sauce
  • 1 can (10 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Crumbled blue cheese and cilantro, for garnish

Instructions:

  1. Place the chicken breasts, onion, buffalo sauce, cream of chicken soup, and chicken broth in the crockpot.
  2. Cook on low for 4 hours. Once cooked through, shred the chicken with two forks and stir in cheese and sour cream. An instant-read thermometer is a really handy tool to have to ensure your chicken is cooked to a safe temperature – the chicken is safe to eat when the internal temperature reaches 165°F (74°C).
  3. Cook for an additional 30 minutes until creamy, then serve with crumbled blue cheese and cilantro.

Crockpot Ham and Potato Soup

This soup is a rich, comforting blend of creamy potatoes and smoky ham—perfect for colder days. It’s like the ultimate comfort food in a bowl with just the right amount of smoky flavor from the ham. It’s hearty enough to be served for dinner, and I love it with a big chunk of crusty, buttered bread!

  • 2 cups diced ham
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp garlic powder

I’ve been known to garnish with diced avocado, which adds a lovely creaminess with each bite!

Ingredients:

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 packet taco seasoning
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • Shredded cheese and cilantro, for topping

Instructions:

  1. Brown the ground beef in a skillet and drain the fat.
  2. Add beef, black beans, corn, diced tomatoes, taco seasoning, and chicken broth to the crockpot.
  3. Cook on low for 6 hours. Serve with sour cream and shredded cheese on top.

This creamy, cheesy soup is always a hit with a crowd, and it uses one of my favorite kitchen hacks – packet tortellini! I almost always have a few packs of this in my fridge, and it’s so handy for creating a quick midweek meal. Here, we’re using the slow cooker to make things extra easy. 

Serves: 4

Ingredients:

  • 1 lb Italian sausage
  • 1 package (9 oz) refrigerated cheese tortellini
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 4 cups chicken broth
  • 1 tsp Italian seasoning
  • Fresh basil and parmesan, for garnish

Instructions:

  1. Brown the sausage in a skillet and drain excess fat.
  2. Add sausage, diced tomatoes, chicken broth, and Italian seasoning to the crockpot.
  3. Cook on low for 4 hours.
  4. Around 30 minutes prior to serving, turn up to high and add the tortellini and stir through the cream. Check that the tortellini has cooked through. Garnish with fresh basil and parmesan before serving.

Crockpot Italian Meatball Soup

This soup features tender meatballs in a savory, herbed tomato broth. It’s an easy, filling meal that’s packed with Italian flavors—meatballs and pasta, what’s not to love?

Serves: 6

Ingredients:

  • 1 lb Italian meatballs (store-bought or homemade)
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 tsp garlic powder
  • 1/2 cup pasta (small shells or ditalini are perfect for this)
  • Fresh parsley and parmesan for garnish

Instructions:

  1. Brown the meatballs in a skillet.
  2. Add meatballs, diced tomatoes, beef broth, and garlic powder to the crockpot.
  3. Cook on low for 4 hours. Ensure that the meatballs are cooked through. Stir in pasta and cook for an additional 30 minutes, or until pasta is tender.
  4. Garnish with fresh parsley and parmesan and serve.
