Cowboy Caviar

Cowboy caviar is the colorful, flavor-packed, super versatile dip that you’ll want to eat on repeat! I serve this one up for parties and game days, and I also love spooning it over chicken and simple dinner bowls to make mealtimes way more interesting. 

It’s really easy too, and we’re basically just going to be doing a bit of chopping and mixing. Fresh veggies and beans are combined in a large bowl, then tossed with a simple lime-forward dressing that ties everything together. After a quick stir, it’s chilled until ready to serve. The result is a fresh, scoopable dip that’s easy to make ahead and even better once it’s had time to sit. I think you’ll love it!

Ingredients

Please note that I’ve included a printable recipe card for you at the bottom of this post! It covers ingredients, measurements, and instructions. Don’t skip the next few sections though, where I’m sharing more details and tips. 

  • Roma tomatoes, seeded and diced — Seeding keeps the mix from getting watery and helps everything stay fresh and scoopable.

  • Red onion, diced — Adds a little bite and color without overpowering the other ingredients.

  • Black beans, rinsed and drained — Hearty and filling, plus they soak up the dressing really well.

  • Black-eyed peas, rinsed and drained — A classic cowboy caviar ingredient that adds texture and mild flavor.

  • Frozen corn kernels, thawed — Sweet pops of corn balance the acidity and spice.

  • Green bell pepper, seeded and diced — Adds crunch and that fresh veggie bite.

  • Jalapeños, seeded and diced — Brings heat; adjust the amount depending on how spicy you like it.

  • Fresh cilantro, chopped — Brightens everything up and ties all the flavors together.

Dressing:

  • Olive oil — Forms the base of the dressing and coats everything evenly.

  • White wine vinegar — Adds a clean, tangy acidity that keeps the dip from feeling heavy.

  • Granulated sugar — Just enough sweetness to balance the vinegar and spice.

  • Fresh lime juice — Adds brightness and a fresh citrus kick.

  • Chili powder — Brings mild warmth and depth to the dressing.

  • Garlic powder — Adds savory flavor without overpowering the veggies.

  • Cayenne pepper (optional) — Use if you want an extra little kick of heat.

  • Salt and pepper — Essential for pulling all the flavors together; adjust to taste.

How To Make Cowboy Caviar 

  • Add all of the dressing ingredients to a small bowl and whisk until well combined. Give it a quick taste and adjust as needed.

  • In a large bowl, add all of the cowboy caviar ingredients.

  • Pour the dressing over the top and toss everything together until evenly coated.
  • Cover and refrigerate until ready to serve. Serve with tortilla chips.

Recipe Notes 

To quickly thaw the frozen corn, place it in a bowl of water for a few minutes, then drain well. It thaws fast and keeps the corn from getting mushy.

Seeding the tomatoes is worth the extra step and helps keep the cowboy caviar from becoming watery as it sits.

Rinsing and draining the beans and black-eyed peas well helps the dressing cling better and keeps flavors clean.

This dip tastes even better after chilling, so give it some time in the fridge if you can.

Taste and adjust the seasoning before serving. A pinch more salt or an extra squeeze of lime can really wake everything up!

Variations 

  • Add diced avocado if you want to make it extra creamy.

  • Stir in diced cucumber for even more crunch and freshness.

  • Any color bell pepper works here, so use what you have on hand.

  • Swap in other beans, like pinto beans, if that’s what’s in your pantry.

  • For extra-spicy cowboy caviar, leave the seeds in the jalapeños or use hotter peppers like serranos or habaneros.
