  • 1 oz envelope brown gravy mix

  • 1 medium onion, diced

  • ½ teaspoon dried thyme

  2. Sprinkle the roast with gravy mix, dry onion soup mix, onion, celery, garlic, and thyme.

  3. Spread the cranberry sauce over the top and dot with butter slices.

  4. Cover and cook on low for 8–10 hours, until the roast is fall-apart tender.

  5. Serve warm with the cranberry gravy from the Crockpot. Garnish with fresh cranberries and herbs.

Cranberry Pork Loin

Cranberries and pork make such a good combo, and this recipe is definitely proof! The pork cooks low and slow in a tangy-sweet cranberry sauce with onion, celery, and thyme until it’s tender enough to slice like butter.   • 4.25 lb pork loin

  • 1 oz envelope dry onion soup mix

  • 1 medium onion, diced

  • 3 ribs celery, sliced

  • 2 garlic cloves, minced

  • 14 oz can whole berry cranberry sauce

  • 4 tablespoons butter, sliced

  • ½ teaspoon dried thyme

Instructions:

  1. Place the pork loin into the Crockpot and sprinkle with dry onion soup mix.

  2. Add onion, celery, and garlic around the pork.

  3. Top with cranberry sauce, butter slices, and thyme.

  4. Cover and cook on low for 6–8 hours or high for 3–4 hours, until the pork reaches an internal temperature of at least 145°F.

  5. Remove from the Crockpot and slice or shred into chunks.

  6. Serve warm with the cranberry sauce from the Crockpot and garnish with herbs, if desired.

Instructions:

  1. In a small saucepan, combine ½ cup of the sugar and ½ cup water. Heat over medium heat, stirring occasionally, until the sugar has completely dissolved to make a simple syrup. Remove from heat and let the syrup cool for about 5 minutes. Add the fresh cranberries to the syrup, stirring gently to coat all the berries evenly. Let them sit in the syrup for about 10 minutes.
  2. Use a slotted spoon to remove the cranberries from the syrup, allowing excess syrup to drip off.
  3. Place the cranberries on a wire rack or parchment paper in a single layer and let them dry for about an hour, until sticky to the touch.

  • ⅔ cup jellied cranberry sauce

  • Whipped cream, fresh cranberries, and rosemary, for garnish

Instructions:

  1. In a bowl, combine the graham cracker crumbs and melted butter until evenly moistened. Press firmly into the bottom of an 8-inch springform pan. Refrigerate while preparing the filling.

  2. In a chilled bowl, beat the heavy whipping cream until stiff peaks form. Set aside.

  3. In another mixing bowl, beat the cream cheese with sugar until smooth and creamy.

  4. Gently fold the whipped cream into the cream cheese mixture until light and fluffy.

  5. Spread the cheesecake filling evenly over the chilled crust.

  6. Warm the cranberry sauce in the microwave in 30-second intervals, whisking until smooth.
