Gingerbread Thumbprint Cookies With Cranberry Sauce

These gingerbread thumbprint cookies are the kind of treat that will see you right the way through fall to Thanksgiving and Christmas! I’ve already made a couple of batches this week whilst I was testing and putting the finishing touches to the recipe, and let me tell you that these practically FLEW out of my kitchen! Both the kids and the adults in my house have loved them, and I just know that these will be getting made on repeat over the next few months.

The dough comes together quickly with pantry staples and a good dose of molasses for that signature gingerbread flavor. Once chilled, you roll it into balls, press in that classic thumbprint, and spoon in just enough cranberry sauce to fill the center. I recommend that you don’t skip the next few sections though, as I’m sharing extra tips! 

  • Unsalted butter (room temp) – Softened butter blends better with the sugar and gives the cookies that tender, chewy texture.
  • Sugar – Just the right amount of sweetness to balance the spice and molasses.
  • Molasses – This gives these cookies their classic gingerbread depth.
  • Egg – Helps bind the dough and adds a little extra richness.
  • Ginger + cinnamon – These two give the cookies that cozy, warm spice we all want from a gingerbread cookie.

How To Make Gingerbread Thumbprint Cookies With Cranberry Sauce 

  • In a large mixing bowl, beat the butter and sugar together with a hand mixer until smooth and creamy. Add in the molasses and egg, then beat again until everything’s fully mixed.

  • Sprinkle in the ginger, cinnamon, salt, baking soda, and 1 cup of the flour. Beat until the flour disappears into the dough, then mix in the second cup. Continue slowly adding the remaining flour until the dough comes together.

  • Cover the bowl with plastic wrap and pop it in the fridge for 30 minutes to chill. When you’re ready to bake, preheat the oven to 350°F and line a large baking sheet with parchment paper. Roll the dough into 1½-inch balls and space them out about 2 inches apart on the tray.

  • Use your thumb or knuckle to press a small well into the center of each dough ball. Stir the cranberry sauce in a bowl until it’s nice and smooth, then spoon a small amount into each well—just enough to fill the space without overflowing.

  • Bake for 12–13 minutes. Let them sit on the baking sheet for 10 minutes, then melt the white chocolate in the microwave. Transfer it to a zip-top bag, snip the corner, and drizzle it over the tops of the cookies. Let them finish cooling on a wire rack.

Storage Tips

Store the cookies in an airtight container in the fridge for 3–4 days. Let them come to room temp before serving so the texture softens a bit. You can also warm them slightly if you like the cranberry filling a little gooey.

Recipe Notes

Here are a few helpful tips to keep in mind when making these gingerbread thumbprint cookies:

Don’t overfill the cookies — the cranberry sauce should come right to the edge of the well, not spilling over. A heaping teaspoon is usually just right.

You can definitely make the cookies larger if you want a more substantial bite, but keep in mind you’ll end up with fewer cookies overall.

When making the indent for the filling, don’t press all the way through to the bottom. Go about halfway, then gently shape it into a neat, even circle to hold the cranberry sauce in place.
