Crockpot BBQ Beef Ribs

It’s finally crockpot season, and I’m so ready for it! These slow cooked BBQ beef ribs are so easy to make, and they’re absolutely delicious served over mashed potatoes for a real comfort food dinner when you want something cozy.

The ribs get rubbed down with a smoky spice blend, then slow-cooked in broth and BBQ sauce until the meat is fall-off-the-bone tender. To finish them off, a quick trip under the broiler caramelizes the sauce into a sticky, finger-licking glaze. It’s a simple process with big results — all you need are a few pantry staples, your favorite BBQ sauce, and of course plenty of napkins!

Ingredients

  • Beef back ribs – Bone-in ribs are ideal here — slow cooking makes them tender and juicy. About 4 pounds (9 ribs) will fit nicely in most crockpots.

  • Smoked paprika – Adds that subtle smoky flavor, even without a smoker.

  • Garlic powder & onion powder – Pantry staples that layer in savory flavor.

  • Salt & black pepper – Essential for seasoning the meat all the way through.

  • Cayenne pepper – A touch of heat to balance the sweetness of the BBQ sauce. Adjust to your spice preference.

  • Beef broth (or water) – Keeps the ribs moist while they cook. Broth adds more flavor, but water works in a pinch.

  • BBQ sauce – Use your favorite bottled sauce here. Half goes in the crockpot for flavor while cooking, and the other half is brushed on at the end for that caramelized, sticky finish.

How To Make Crockpot BBQ Beef Ribs 

  • Pat the ribs dry with paper towels, then season all over with smoked paprika, garlic powder, onion powder, salt, black pepper, and a little cayenne for kick. If your ribs came in a big rack, slice them into smaller sections so they’ll fit in the crockpot.

  • Place the ribs in the crockpot, pour the beef broth over top, and slather on half of the BBQ sauce. Save the rest of the sauce for later.

  • Cover and cook on low for 7–8 hours, until the meat is fall-apart tender.

  • When the ribs are ready, preheat your oven broiler and line a baking sheet with foil. Transfer the ribs onto the sheet, brush them generously with the remaining BBQ sauce, and broil on HIGH for 3–5 minutes until the sauce caramelizes into sticky, finger-licking goodness.

Storage & Reheating

Store any leftover ribs in a sealed container in the fridge for 3–4 days. To reheat, place them on a foil-lined baking sheet and warm in a 375°F oven for 10–12 minutes, or until heated through and the BBQ sauce is bubbly again. (You can microwave them, but the oven keeps that caramelized finish intact.)
