We might be approaching summer, but I’m definitely not ditching my crockpot just yet! These slow cooker chicken fajitas are packed with tender shredded chicken, peppers, and onions, all cooked together with simple seasoning for an easy, healthy dinner.

How To Make Crockpot Chicken Fajitas 

  • Add the diced tomatoes, peppers, onions, garlic, and chicken to a 6-quart or larger slow cooker.
  • Sprinkle the fajita seasoning and black pepper over the chicken, then add the lime juice.

  • Cover and cook on low for 6–8 hours or high for about 4 hours, until the chicken is fully cooked and tender.
  • Remove the chicken and shred it using two forks, then return it to the slow cooker and stir to combine with the juices and vegetables.

Storage & Reheating 

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Store the tortillas and any toppings separately so everything stays fresh.

For longer storage, transfer cooled chicken and veggies to a freezer-safe container or bag and freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.

To reheat, warm in a skillet over medium heat, stirring occasionally, until heated through. Add a splash of water, broth, or lime juice to keep everything from drying out.

You can also reheat in the microwave in 1-minute intervals, stirring in between, until warmed through.

If you prefer, you can reheat in the slow cooker on low for 1–2 hours until heated through.

Recipe Notes & Helpful Tips 

Layering matters! Place the chicken on top of the vegetables so it cooks evenly and stays tender.

There’s no need to add extra liquid. The tomatoes, lime juice, and natural moisture from the peppers and onions create plenty of liquid as everything cooks.

If you’re short on time, you can use thinner chicken breasts and cook on high for about 4 hours.

After shredding the chicken, return it to the slow cooker and toss it with the vegetables and juices so everything is well coated.

When serving, use tongs or a slotted spoon to avoid adding too much liquid to the tortillas.

Warming the tortillas right before serving makes them softer and easier to fill.
