Crockpot Queso Dip

It’s the time of year when I start to think about all the treats that I want to serve up for game day! Honestly I can take or leave the football, but you better believe that I want to go all out when it comes to making sure that we’ve got the best snacks and appetizers. And today I want to share with you my crockpot queso dip!

This one is about as easy as it gets. Everything gets stirred together in one bowl, transferred to the slow cooker, and heated until smooth and melty. After that, it’s hands-off. Just switch it to warm and let it do its thing while you focus on the party, the game, or literally anything else. It’s simple, reliable, and exactly why this dip always shows up when a crowd is involved!

Ingredients

  • Ground beef, browned and drained — Keeps the dip hearty and flavorful without being greasy.

  • Red salsa — Use your favorite since it sets the flavor; mild or spicy both work depending on your crowd.

  • Nacho cheese sauce — The creamy base that keeps everything smooth, melty, and scoopable.

  • Sour cream — Adds richness and balances the salsa with a little tang.

How To Make Crockpot Queso Dip

  • In a mixing bowl, combine the beef, salsa, cheese, and sour cream. Stir until everything is well mixed.

  • Pour the mixture into the crockpot and spread it out evenly.

  • Cover and cook on HIGH for 1 hour and 30 minutes, then switch to WARM to keep it melty.

  • Serve as a dip or use it as a topping, and enjoy.

Storage & Reheating 

Store leftover queso in an airtight container in the refrigerator for up to 5 days.

Reheat gently in the microwave or on the stovetop, stirring often to keep it smooth.

This dip doesn’t freeze well, so it’s best enjoyed fresh or within a few days!

Recipe Notes 

This queso can also be made on the stovetop. Just use a small saucepan, heat it slowly, and stir often so the sour cream doesn’t curdle and nothing sticks or burns.

Since this dip is so simple, using salsa and nacho cheese you actually like makes a big difference! I’m a fan of jalapeño nacho cheese for extra flavor, but use whatever you prefer.

Make sure the ground beef is well drained before mixing so the dip stays creamy, not greasy.

If the queso thickens as it sits, stir in a splash of milk to loosen it back up.

Keep the crockpot on WARM for serving and give it a quick stir now and then to keep everything smooth!
