Recipe Notes

Brown the sausage well. Those crispy edges add tons of flavor to the dip!

Be sure to drain the Rotel before adding it. Too much liquid can make the dip thinner than you want, especially once it gets bubbly.

Velveeta melts beautifully, but stir frequently so nothing sticks or scorches on the bottom of the pan.

If the dip thickens as it sits, just warm it gently and stir or add a splash of milk to loosen it back up.

You can easily keep this dip warm in a slow cooker on the “warm” setting during a party so guests can scoop all game long.

Serving Ideas

This dip is made for football watch parties, so set it out with a big bowl of tortilla chips or scoops and watch it disappear! It also pairs perfectly with celery sticks, pretzel bites, or thick-cut potato wedges if you want a mix of dippers.

Keep it warm in a small crockpot if you like so everyone can go back for more throughout the game. You can even spoon it over baked potatoes, nachos, or hot dogs for a fun, over-the-top game-day spread. And if you’re hosting a crowd, add it to a snack table with wings, sliders, and veggies. It fits right in with all the classics!

Variations

  • Make it spicier: Use hot sausage, or stir in diced jalapeños or a splash of your favorite hot sauce.

  • Milder version: Swap Rotel for plain diced tomatoes and use mild sausage.

  • Add veggies: Bell peppers, onions, or corn can be sautéed with the sausage for extra flavor and color.

  • Swap the meat: Ground beef, turkey, or chorizo all work — each gives the dip its own vibe.

  • Cheese swap: If you’re not a Velveeta fan, use a mix of shredded cheddar and Monterey Jack; just keep the cream cheese for smoothness.

  • Stretch it for a crowd: Add a can of black beans or drained corn to bulk it up without losing the flavor.
