Greek Chicken Flatbreads

Ingredients
Here I’m explaining more about the ingredients I’ve selected and their role in the recipe. I know that regular readers like to have a printable recipe card, and you’ll find that towards the bottom of this page!
Chicken:
-
Boneless, skinless chicken breast: Lean and tender, and it cooks quickly in the skillet. Cutting it into bite-sized pieces helps it cook evenly.
-
Plain Greek yogurt: Helps tenderize the chicken while adding a little tang and creaminess to the marinade.
-
Fresh lemon juice: Brightens the marinade and adds that classic Mediterranean flavor.
-
Extra virgin olive oil: Helps coat the chicken and carry all the flavors of the marinade.
-
Garlic: Adds bold, savory flavor that pairs perfectly with the lemon and herbs.
-
Red wine vinegar or apple cider vinegar: Adds a little acidity that helps balance the marinade.
-
Salt: Seasons the chicken and enhances all the other flavors.
-
Freshly cracked black pepper: Adds a little warmth and depth to the marinade.
-
Italian seasoning or oregano: Brings the classic herb flavor you expect in Greek-style chicken.
Salad:
-
Cherry tomatoes: Add sweetness and freshness to the flatbread.
-
English cucumber: Crisp and refreshing, with fewer seeds than regular cucumbers.
-
Red onion: Adds a little sharp bite that balances the creamy tzatziki.
-
Kalamata olives: Provide that signature salty, briny Mediterranean flavor.
-
Extra virgin olive oil: Lightly coats the salad and ties all the ingredients together.
-
Salt: Enhances the flavor of the vegetables.
-
Black pepper: Adds a little warmth and seasoning.
-
Fresh dill: Brings a bright, herby flavor that works beautifully with the yogurt sauce.
-
Tzatziki sauce: A creamy cucumber-yogurt sauce that adds cool, tangy flavor to the flatbread.
-
Feta cheese: Salty and crumbly, it adds richness and that classic Greek flavor.
-
Pita or naan bread: The base for the flatbread. Warming it first makes it soft and flexible for serving.

How To Make Greek Chicken Flatbreads
-
In a medium bowl or zip-top bag, combine the chicken, yogurt, lemon juice, olive oil, garlic, vinegar, salt, pepper, and Italian seasoning. Mix well so the chicken is evenly coated. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

-
In a separate bowl, combine the tomatoes, cucumbers, onions, olives, olive oil, salt, pepper, and fresh dill. Toss everything together until evenly coated and season to taste.

-
Heat 2 teaspoons of olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade and add it to the hot pan in a single layer. Cook for about 10 minutes, turning occasionally, until the chicken is golden brown and cooked through to 165°F. Work in batches if needed so the pan isn’t overcrowded.

-
To assemble, spread tzatziki sauce over the pita bread. Top with the cooked chicken and a generous scoop of the Greek salad.
-
Finish with crumbled feta and extra fresh dill if desired, then serve and enjoy.

Storage & Reheating
Store the chicken, Greek salad, and flatbreads separately in airtight containers in the refrigerator for up to 3 days.
The salad is ideally best enjoyed within 1–2 days, since the tomatoes and cucumbers will start to release liquid over time.
The cooked chicken can be frozen in an airtight container or freezer bag for up to 2 months.
Warm the chicken in a skillet over medium heat for about 4–5 minutes, or heat it in the microwave for about 2 minutes, until warmed through.

Recipe Notes
-
Marinate the chicken for at least 30 minutes for good flavor, but if you have more time, letting it sit longer (even overnight) will make it even better.
-
Cut the chicken into evenly sized, bite-sized pieces so everything cooks at the same rate.
-
Don’t overcrowd the pan. Cooking the chicken in a single layer helps it get that nice golden color. You’ll likely need to cook it in batches.
-
Use an instant-read thermometer if possible. The chicken is done when it reaches 165°F.
-
Warm the pita or naan right before serving. This makes the bread soft and flexible, which helps when assembling the flatbreads.

Variations
-
Use chicken thighs: Boneless, skinless chicken thighs can be used instead of chicken breasts for a slightly richer flavor.
-
Grill the chicken: During the warmer months, cook the chicken on the grill for a nice char. Grill over medium heat for about 5 minutes per side, then slice before serving.
-
Make it a bowl: Skip the flatbread and serve the chicken and Greek salad over rice or farro for a hearty grain bowl.
-
Try a vegetarian version: Swap the chicken for grilled halloumi or roasted chickpeas for a delicious meat-free option.
What To Serve With Greek Chicken Flatbreads
-
Serve with rice or lemon potatoes: A side of fluffy rice or roasted Greek lemon potatoes makes this a more filling meal.
-
Add a bowl of soup: Greek lemon avgolemono soup pairs really nicely with the fresh flavors of the flatbread.
-
Make it family-style: Set everything out and let everyone build their own flatbreads. It’s great for casual dinners, and the recipe is easy to double or triple if you’re feeding a crowd.
Toppings for Greek Chicken Flatbread
One of the best things about these flatbreads is how easy they are to customize. You can keep them simple or load them up with extra toppings depending on what you have on hand.
-
Extra tzatziki: A little more creamy sauce always makes these even better.
-
Crumbled feta: Adds salty, tangy flavor that pairs perfectly with the chicken.
-
Shredded lettuce: Adds a fresh crunch and makes the flatbread feel a little lighter.
-
Sliced pepperoncini: Great if you like a little tangy bite.
-
Pickled red onions: Adds brightness and a bit of acidity that balances the richness.
-
Hummus: A thin layer under the chicken adds extra creaminess and flavor.
-
Fresh herbs: Extra dill or parsley on top gives the flatbreads a fresh finish.
-
Lemon wedges: A squeeze of lemon right before eating really brightens the whole dish.
