Instant Pot Shredded Chicken Bruschetta
A quick confession. I’ve had an Instant Pot for years and years, and most of that time, it sat in the back of my kitchen cupboard gathering dust. To be honest, it terrified me a little bit. But recently I decided to conquer the fear, and let me tell you that it’s definitely been worth it!
This Instant Pot shredded chicken bruschetta was one of the first recipes that I created, and if you’re looking for a fresh, flavorful recipe that’s perfect for meal prep, this is the one. Juicy shredded chicken cooks in a garlicky, herby broth — perfectly tender and packed with flavor. Then it’s topped with a simple homemade bruschetta made from cherry tomatoes, balsamic, olive oil, and fresh basil for that bright, tangy finish.
It’s the perfect balance of warm and cool, savory and fresh, and I promise you that it’s super easy to prep (and really not scary in the slightest!). Serve it over rice, pasta, or even tucked into wraps for an easy lunch. The best part is that leftovers keep beautifully for meal prep, so you can make a batch once and enjoy it all week long without getting bored.

Ingredients

For the Chicken:

Chicken breasts – boneless and skinless; they’ll cook up tender and shred easily in the Instant Pot.

How To Make Instant Pot Shredded Chicken Bruschetta

Add the chicken, broth, garlic, Italian seasoning, salt, pepper, and a pinch of red pepper flakes to a 6-quart Instant Pot.

Secure the lid and set the valve to Sealing. Pressure cook on High for 10 minutes, then let it naturally release for 5 minutes before carefully doing a quick release for the rest of the pressure.

Remove the lid and shred the chicken right in the pot using two forks, tossing it in all those flavorful juices.

In a separate bowl, combine the diced tomatoes, olive oil, balsamic vinegar, garlic, shallots, salt, and pepper. Give it a good stir to coat everything evenly.

To serve, layer the shredded chicken over cooked rice, then spoon the fresh bruschetta mixture on top. Garnish with basil and a sprinkle of shredded Parmesan before serving.

Recipe Notes

For super easy shredding, place the cooked chicken in a stand mixer fitted with the paddle attachment and let it run for 20–30 seconds. A hand mixer works great too.

Use ripe, firm cherry or grape tomatoes for the bruschetta topping. Softer tomatoes can release too much liquid and make it a little watery.

The shallot is optional, but it adds such a nice mild bite to the bruschetta. You can also swap in thinly sliced red onion if that’s what you have.

If your chicken breasts are on the thicker side, add a couple extra minutes to the cook time. Just make sure they’re cooked through to 165°F using a meat thermometer.

For the best flavor, chill the bruschetta topping in the fridge for about 10–15 minutes before serving, as it lets the flavors really come together.

Meal Prepping Tips
Scoop the shredded chicken and bruschetta topping into individual meal prep containers and refrigerate for up to 3 days, or freeze for up to 3 months.
If you’re freezing, it’s best to portion the shredded chicken into freezer bags instead of containers. They stack flatter and save space. Keep the chicken and bruschetta mixture separate so the tomatoes stay fresh and don’t get soggy when thawed.
When you’re ready to eat, just thaw overnight in the fridge and reheat the chicken while keeping the bruschetta topping chilled. So good!

Serving Ideas
Of course, this one is great over rice (jasmine, brown, or even cauliflower rice if you want to keep things lighter). But it’s also delicious served over pasta, quinoa, or even mashed potatoes for a cozy twist.
Pile it on top of toasted ciabatta or garlic bread for a fast, protein-packed lunch, or spoon it into lettuce wraps for something fresh and low-carb. You can even use it as a meal prep topping for grain bowls with roasted veggies or a side salad.
And don’t skip extra balsamic drizzle or sprinkle of Parmesan right before serving. It makes everything pop!
