Creamy cottage cheese gets topped with crisp vegetables, a splash of white balsamic, and fresh basil for a simple, high-protein dish that comes together in minutes.   • Prep the vegetables: Dice the cucumber, bell pepper, and tomato. Mince the shallot and chop the fresh basil.
