How to serve your Bombay potatoes
The slimming friendly Bombay potatoes can be served alongside any kind of Indian meal, though they work particularly well with my slimming chicken Jalfrezi.
If you want to go the whole hog, knock up a tray of slimming onion bhajis too. They’re low in calories, and one of the simplest recipes that you’ll ever make.
Alternatively, you can use your Bombay potatoes to create a light vegetarian supper by serving it on top of a warmed naan bread with a dollop of natural yoghurt.
Slimming Bombay Potatoes
Ingredients
- 4 medium sized potatoes peeled and cut into 1" cubes
- 1 onion roughly chopped
- 2 garlic cloves finely chopped
- 1 tbsp tomato puree
- 1/2 lemon juice of
- 1 tbsp water

- Low calorie cooking spray
- Fresh coriander to serve
Instructions
- Par boil the potatoes for around 5 minutes, or until tender (but not so soft that they start to fall apart). Drain.
- Heat a heavy based pan over a medium heat and spritz with low calorie cooking spray. Add the onions and fry until they're softened and starting to brown, and then add the garlic and fry for another minute.
- Add the potatoes and Spicentice mix to the pan and stir well.
- Add the tomato puree, water, and lemon juice, and stir again, making sure that the potatoes are well coated. Cook for a further 5 minutes, whilst stirring regularly.
- Sprinkle with fresh coriander, serve, and enjoy!
