Chinese Chicken Fried Rice | Slimming Friendly

This slimming friendly Chinese chicken fried rice recipe is the ideal solution if you’re cooking for just one person, and you want an easy meal that doesn’t involve doing all kinds of inconvenient things like opening a load of tins and only using half their contents.

Because if you’re anything like me, doing that only leads to wasting too much stuff, even if you have the best intentions at the time.

Whether you live alone or those you usually cook for have other plans, this a great slimming option which doubles up as a convincing fakeaway on those evenings when you’re tempted to call up your local Chinese.

Is this recipe slimming friendly?

Yes!

If you’re a calorie counter, then it contains 558 calories.

This is slightly higher than some of the other recipes that you’ll find here on Slimming Violet – like my chicken Jalfrezi with 273 calories, or my corned beef pasties with 329 calories – but it’s still low enough to be workable on pretty much any kind of diet.

It’s also worth noting here that this slimming friendly Chinese chicken recipe is a complete meal in its own right…

It’s got protein, carbs, and veggies, so there’s no need to bother with making any side dishes.

Using single serving bags of frozen rice

We’ve all got those go-to ingredients that we always have at hand, and one of mine is single serving bags of frozen rice. You can pick them up in most supermarkets, and you just ping them in the microwave for about 4 minutes and you’re good to go.

It’s quicker than boiling up a pan, and you don’t have to faff about with any weighing.

I use these regularly in recipes, and also when I just want to serve a side dish of rice.

They’re not the most economical option, but I reckon they’re worth it.

Of course, if you’ve already got a bag of rice in your kitchen cupboard that you’d prefer to use, then that’s fine too. Just cook it according to packet instructions and use it as directed in the recipe.

Slimming Chinese Chicken Fried Rice

This recipe couldn't be easier, and is the ideal solution if you're cooking for one. Plus, it's totally slimming friendly!

Ingredients

  • 1 chicken breast raw, diced or sliced
  • 1 150g bag of frozen rice
  • 2 large mushrooms sliced
  • 80 grams frozen peas
  • 80 grams mangetout
  • 1/2 onion sliced
  • 1 clove garlic finely chopped
  • 1 egg
  • 2 tsp soy sauce
  • Low calorie cooking spray

Instructions

  • Heat a heavy based pan over a medium heat, spritz with low calorie cooking spray, and add the onion and garlic. Gently fry for 2 minutes or until onions have softened. 
  • Add the chicken to the pan, and continue to cook for around 5 minutes or until the chicken is sealed and starting to brown. 
  • Add the mushrooms, mange tout, and frozen peas, and cook for a further 3 minutes.

  • Meanwhile, cook the rice according to packet instructions and drain any excess water. Add the rice and soy sauce to the pan and stir well. Crack the egg into the pan, and allow to cook for around 30 seconds. Then, stir everything well whilst continuing to cook for around 1 minute, or until the egg is cooked to your liking.

  • Serve and enjoy!
