Keto Cauliflower Hash Browns

Crispy, golden, and surprisingly satisfying, these keto cauliflower hash browns are proof that low-carb doesn’t have to mean low-comfort. Made with just three ingredients—cauliflower rice, cheese, and an egg—they come together quickly and cook up perfectly in a waffle maker. No frying, no flipping, and no mess.

They’re ideal for breakfast, brunch, or an easy low-carb side dish. Plus, they’re endlessly customizable so you can put your own spin on them – I love serving these with a burger as a substitute for a bun, like the ultimate keto friendly sandwich. Simple, crisp, and totally craveable—this is a keto staple worth repeating.

The added bonus is that each hash brown contains just 100 calories, 2g of carbs, and 7g of protein!

Ingredients

  • Riced cauliflower: I like to buy frozen cauliflower rice and simple thaw it before using in this recipe. If you prefer, you can make your own from scratch using a food processor.
  • Cheese: I like Monterey Jack for making these hash browns.

Variations – Make Them Your Way

These cauliflower hash browns are simple by design, but easy to customize depending on what you’ve got in the fridge or the kind of flavors you’ve got in mind:

1. Change Up the Cheese

  • Try cheddar, mozzarella, pepper jack, or a mix for different flavor profiles and meltiness.
  • For extra crisp edges, adding a little sharper cheese to the mix like parmesan works beautifully.

2. Add Herbs or Spices

  • Stir in a pinch of garlic powder, onion powder, paprika, or Italian seasoning for extra flavor.
  • Fresh herbs like chives or parsley give them a light, herby finish.

3. Boost the Veggies

  • Mix in finely chopped spinach, green onions, or bell peppers—just be sure to squeeze out any excess moisture first.

4. Add a Protein Kick

  • Stir in some crumbled cooked bacon, breakfast sausage, or diced ham for a heartier version.

5. Make Them Spicy

  • Add a pinch of red pepper flakes or a few dashes of hot sauce to the mix for a little heat.
